southwest chicken rolls

Dipping Sauce: I just mix 1 part salsa to 3 parts sour cream
- Soft flour tortillas (fajita size) or Egg Roll Wrappers, I prefer tortillas
- 2 cups cooked chicken, shredded
- 2 cups frozen corn, thawed and drained
- 1 can black beans, rinsed and drained
- 2 cups Mexican Blend cheese (1 bag pre-shredded)
- 1/2 medium onion diced
- 1 "10-oz box" frozen spinach. Defrosted, and liquid drained. (I just wrung mine between 2 papertowels)
- 2 cloves garlic, finely minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 TBSP olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon pepper

Preheat oven to 350. Lightly grease baking pans, or use baking sheets
- 1 cup butter, softened
- 2 cups sugar
- 1 tsp. vanilla extract
- 2 whole eggs
- 2 tsp. lemon zest
- 2 Tbsp. fresh lemon juice (abt 1 lemon)
- 1/2 tsp. salt
- 1/2 tsp. baking powder
- 1/4 tsp. baking soda
- 3 cups flour
- 1 cup powdered sugar

Start with 1 fresh jalapeno pepper
- 1 jalapeno, seeded and diced
- 1 cup grated cheddar cheese
- 1 egg
- 4.5 oz can chopped green chiles

1.Preheat the oven to 350 degrees
- For the crust:
- 2 cups flour
- 1 cup confectioners’ sugar
- pinch of salt
- 2 sticks unsalted butter at room temperature
- For the filling:
- 4 eggs
- 2 cups sugar
- 4 Tablespoons lemon juice
- 4 Tablespoons flour
- 1/2 teaspoon lemon extract
- 1 teaspoon baking powder

In a 3-1/2- or 4-quart slow cooker, stir together chicken, undrained tomatoes, soup, and corn
- 1 lb (3 medium breasts) of chicken breast, but into 1 inch cubes.
- 10.75-oz. can condensed nacho cheese soup (campbells)
- 2-3 cups cooked rice
- 2 cups frozen whole kernel corn
- 1/2 packet of mild taco seasoning
- 2 - 14.5-oz. cans Mexican-style stewed tomatoes, undrained

1. Preheat oven to 375 degrees 2
- 1 Jar Alfredo Sauce (I used Bartilla regular, not garlic or anything, but you can if you want)
- 1 chicken breast, cooked and shredded (we just boil ours, and shred it)
- Cooked Penne Pasta (I used about 1/2 the box, but however much you want)
- 1 Can of pineapple tidbits, drained (the smaller half/size can, or just half of the larger can)
- 1 1/2 cup mozzarella cheese
- 1/4-1/2 cup Parmesan cheese, shredded (I buy it pre-shredded)

Place the popped popcorn in a large bowl with the broken up pretzels and M&Ms
- 1 bag popcorn, popped (I used Tender White)
- 6 oz. white chocolate candy coating
- 1 bag Easter M&Ms
- pretzel sticks, broken into small pieces

1.Preheat oven to 350. Pat chicken dry and season with salt and pepper
- ◦1 lb. boneless, skinless chicken breasts trimmed & pounded if necessary

- ◦2 1/2 cups of enchilada sauce (store bought or from scratch)
- ◦1 cup finely crumbled queso fresco or feta cheese
- ◦1 (4 oz.) can of green chiles
- ◦1/2 cup minced fresh cilantro
- ◦12 (6-inch) soft corn tortillas
- ◦Vegetable oil spray (or you can use vegetable oil in a little bowl with a brush)

- 2 can's Black Beans, UNDRAINED (1 can pinto, 1 can black if you like that)
- 1/2 can of diced green chilis, (rinsed and drained) Use the whole can if you like the spice
- 1 lb of ground beef, browned. (cook with a little onion powder)
- 1 can diced tomatoes, UNDRAINED
- 1 Can Sweet yellow corn, UNDRAINED
- 1 packet of ranch powdered dressing
- 1 packet of taco seasoning

Heat oil in a large pot over medium-high heat and rub roast with salt and pepper
- 1 2.5-3 lb. beef roast (you can use a frozen roast if you want)
- 2 Tbsp. olive oil
- salt and pepper
- 2 1-ounce packages dry onion soup mix
- 2 c. water
- 2 cans beef broth
- 6-8 large buns (or more…6 would be VERY generous servings!)
- Swiss, provolone, or mozzarella cheese, shredded or sliced.
