On a hot grill, char the jalapenos
- 4 large Jalapeno Peppers
- 3-4 ounces Cream Cheese, softened
- 4-5 Green Onions, minced
- Black Pepper, to taste
- 4 slices Colby Jack or Cheddar Cheese
- 4 slices Sourdough Bread
- Butter

Heat oven to 350. In a shallow dish combine the flower and seasonings
- 2-3 bonless, skinless chicken breasts, diced into bite sized pieces
- 1/3 cup flour
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt and pepper
- 4 TB butter
- 1/4 cup honey
- 3 TB lemon juice
- 2 TB soy sauce
- 1/2 tsp. ground ginger

Preheat oven to 400°F. Position a rack in the upper third of the oven
- 2 tablespoons EVOO - Extra Virgin Olive Oil
- 1 onion, chopped
- 2 tablespoons chili powder
- 2 teaspoons ground cumin
- 1/4 cup tomato paste
- 1 pound ground beef
- Salt and pepper
- 1 15-ounce can red kidney beans, drained and rinsed
- 1 15-ounce can diced tomatoes
- 1 1-pound bag frozen shredded hash brown potatoes

- 3-4 boneless, skinless chicken breasts
- Salt and pepper
- 1 cup cornstarch
- 2 eggs, beaten
- 1/4 cup canola oil

- 3/4 cup zucchini, shredded (about 1 small zucchini)
- 1 1/2 teaspoons salt, divided

- 2 pounds ground chicken
- 6 pineapple rings (or equivalent slices, cut about 1/2" - 3/4" thick)
- 6 slices pepper jack cheese
- 6 whole wheat hamburger buns
- 1/4 cup low-sodium soy sauce
- 1 tsp smoked paprika
- 1 tsp chili powder
- 1/2 tsp seasoning salt (I use Lawry's)
