  • 1 C all-purpose flour
  • 1 C whole-wheat flour
  • 1 tsp. baking soda
  • 1/2 tsp. cinnamon
  • 1/2 tsp. salt
  • pinch of nutmeg
  • 1 C packed brown sugar
  • 2 granny smith apples, peeled, cored and cut into 1/4" pieces
  • 1/4 C unsalted butter, softened
  • 2 eggs
  • 1 C natural applesauce
  • 1 tsp. vanilla
  • 3/4 C buttermilk

Step 1

Heat oven to 400°. Grease muffin tin or fill with paper liners; set aside.

In a small bowl, whisk together flours, baking soda, cinnamon, salt and nutmeg. In another small bowl, stir together 1/4 C brown sugar and half of the apple pieces; set aside.

Beat butter and remaining 3/4 C brown sugar toghether on medium-high speed until well belnded, about 2 minutes. Ad eggs, one at a time, beating well after each. Beat in applesauce and vanilla.

Reduce speed to low and alternately add flour mixture and buttermilk, satrting and ending with flour. Stir in remaining apple pieces.

Fill each muffin liner with 1/4 C batter. Sprinkle 1 T apple/brown sugar mixture on top of each muffin. Bake for about 20 minutes ro until toothpick inserted in center comes out clean. Cool on a rack for 15 minutes then remove from pan and cool completely.
