Jerk Fish with Pineapple Rice

1. In a small saucepan, bring the rice, coconut milk, butter, and water to a boil
- 1 1/2 cups jasmine rice
- 1/2 cup plus 3 tbsp. unsweetened coconut milk
- 1 cup cold water
- 2 tbsp. unsalted butter
- Four 6 oz. pieces halibut, swordfish, or striped bass
- Salt
- 1 to 2 tsp. Jamaican jerk seasoning
- ( I used Red Monkey mango habanera rub)
- 1 pineapple- cut into rings
- 1 tbsp. olive oil
- 1 cup frozen baby peas, thawed
- pepper
- 1 lime, cut into wedges
Corn Casserole

Mix all ingredients. Cook at 350 until set in middle
- 2 cans cream corn
- 1/2 cup cornmeal
- 1/4 cup sugar
- 1/4 stick butter
- 1 cup grated cheese
- 1 egg, beaten
- 1 small onion, chopped
- jalapenos, chopped
- garlic powder

- 2 Tbs Honey
- 2 1/4 tsp salt
- 5 cups flower (you can use all white, half white/half wheat, or all whole wheat)

- 2 tsp. instant yeast

- Ingredients for a two crust pie:
- â–ª 2 1/2 cups flour
- â–ª 1 tsp salt
- â–ª 1 tsp sugar
- â–ª 2 sticks unsalted butter
- 6-10 tablespoons cold water (This is quite a gap in measurements, however, since I use freshly milled grains, it’s much lighter and I only need around 6tbls of water. If you’re using store bought flour, you will most likely need anywhere from 8-10.
