Chicken and Black Bean Enchilada Casserole

- 2 cups diced or shredded chicken breast meat (or for extra lazy days use a rotisserie chicken)
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon garlic powder
- 2 Tablespoons chopped fresh cilantro
- 1 (15 oz) can black beans, rinsed and drained
- 1 (4.5 oz) can diced green chili peppers, drained
- 1 (10 oz) can red enchilada sauce
- 8 (6 inch) corn tortillas
- 2 cups shredded Mexican blend cheese
- 1 (8 oz) container sour cream
Apple Pecan Dip

Toast pecans in a small pan with melted butter
- 3 tbsp. salted butter
- 1 cup pecan pieces
- 1 8 oz. pkg. cream cheese (room temp.)
- 1/2 cup brown sugar
- caramel candies
- 3 tbsp. water
- 2-4 apples, sliced
Taco Pizza

. Heat oven to 375 degrees
- 1 lb. ground beef
- 1 envelope taco seasoning mix
- 2 (8 oz.) cans Pillsbury crescent rolls
- 1 (16 oz.) can refried beans (I used the jalapeño kind)
- 2-3 cups shredded cheddar cheese or Mexican blend
- 1/2 cup chopped tomatoes
- 1/4 cup sliced black olives
- 4 green onions, chopped
Shoe Peg Corn Casserole

Mix everything except crackers and butter
- 1 can shoe peg corn- drained
- 1 can French style green beans- drained
- 1 can sliced water chestnuts- drained (may chop smaller)
- 1 can cream celery soup
- 1 cup cheese
- 1/2 cup onion- chopped
- 1 sleeve Ritz crackers- crushed
- 1 stick butter- melted
Basic Waffles

- Basic
- 1 cup all purpose flour
- 1 cup whole wheat flour
- 1/2 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. salt
- 3 tbsp. sugar
- 3 eggs, beaten
- 2 oz. unsalted butter, melted
- 16 oz. buttermilk, room temp.
- Chocolate waffles
- 1 1/2 cups all purpose flour

- 1 8oz. pkg cream cheese
- 1 stick butter
- 1 egg
- 1/2 tsp. vanilla
- 1 butter cake mix
- pwd. Sugar
Prosciutto Stuffed Chicken Bake

With small sharp knife make a 2 inch wide horizontal slit in the side of each breast to create a deep pocket
- 8 chicken breasts
- 8 slices or prosciutto or 4 pieces of Canadian bacon, halved
- 6 cups cooked rice
- 1 cup sliced green onions
- 1/4 cup butter
- 1/4 cup all purpose flour
- 1/4 tsp. pepper
- 2 cups milk
- 1 cup coarsely chopped asparagus (12 stalks)
- 3/4 cup grated parmesan cheese, divided
- 1/4 cup white whine or milk
- 3/4 cup bread crumbs
- 1/2 tsp. Italian seasoning
Pie Crust

- 1/3 cup shortening + 1 Tbsp.
- 2 Tbsp. iced water
PIZZA SAUCE

- 1/2 cup water
- 1/2 tsp. sugar
- 1/2 tsp. salt
- 1/2 tsp. oregano
- garlic powder to taste
