White Bean Roasted Red Pepper Salad

Whisk together the olive oil, vinegar, honey, mustard, salt, pepper, and garlic in a medium bowl
- 1 1/2 tablespoons olive oil
- 1 1/2 teaspoons apple cider vinegar
- 1 teaspoon honey
- 1/2 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 small clove garlic, grated on a microplane
- 1 (16 oz) can cannellini beans, rinsed and drained
- 1 roasted red bell pepper, chopped
- 1/4 small red onion, thinly sliced
- 3 tablespoons minced fresh parsley
