Dill Pickle Dip

1. In a medium bowl combine all ingredients
- 1 package {8 oz.} cream cheese, softened
- 1 1/4 cups dill pickles, finely chopped
- 1/4 cup sweet onion, such as Vidalia, finely chopped
- 2 -3 tablespoons pickle juice from jar {more for thinner dip, less for thicker}
- 1/2 teaspoon dill weed
- 1/4 teaspoon garlic powder
- Pinch of pepper
Roasted Cherry Tomato Triscuit Cups

1. Preheat oven to 400°. Fill a 9-by-13-inch pan halfway with warm water
- 24 Triscuit Rosemary and Olive Oil Crackers (from one 9 ounce box)
- 1 tablespoons extra virgin olive oil
- 3 tablespoons freshly grated Parmesan cheese
- Roasted Cherry Tomatoes (recipe follows)
- 24 tiny sprigs fresh thyme, optional for serving
- Roasted Cherry Tomato Sauce
- 24 cherry tomatoes, (from 10.5 ounce package)
- 2 cloves garlic smashed
- 2 tablespoons olive oil
- 1 1/2 teaspoon balsamic vinegar
- 1 teaspoon fresh thyme leaves
- 1/2 teaspoon brown sugar
- 1/4 teaspoon coarse salt
Gnocchi with Zucchini Ribbons & Parsley Brown Butter

Bring a large saucepan of water to a boil
- 1 pound fresh or frozen gnocchi
- 2 tablespoons butter
- 2 medium shallots, chopped
- 1 pound zucchini, (about 3 small), very thinly sliced lengthwise (see Tip)
- 1 pint cherry tomatoes, halved
- 1/2 teaspoon salt
- 1/4 teaspoon grated nutmeg
- Freshly ground pepper, to taste
- 1/2 cup grated Parmesan cheese
- 1/2 cup chopped fresh parsley
Snap Pea Pancakes with Chorizo

For the pea pancakes: Blanch the sugar snaps in a pot of salted boiling water, transfer to an ice bath and drain
- 4 ounces sugar snap peas
- 1 cup shelled fresh green peas, or frozen
- 3 tablespoons half & half
- 1 egg
- 4 tablespoons flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon sugar
- salt to taste
Crab and Cream Cheese Stuffed Jalapeno Poppers

Preheat the oven to 375 degrees
- 4 jalapenos sliced in half lengthwise with all of the insides removed (seeds included!)
- 4 oz (about half a package) of cream cheese
- 3 oz of crab meat
- 1 Tablespoon of finely diced green onion (plus more for garnish)
- Panko bread crumbs
- Non-stick cooking spray
Baked Shrimp Egg Rolls

Instructions Preheat oven to 400 degrees
- 1 tbsp vegetable oil
- 8 large shrimp, diced
- 2 cups cabbage, shredded
- 1 medium carrot, shredded
- 1 garlic clove, minced
- 1 tbsp soy sauce
- 1/2 tsp sriracha sauce
- A couple dashes of fish sauce
- 2 tbsp scallion, diced
- 4 Egg roll wrappers
Fried Mozzarella Caprese Salad

1. In a food processor, add the basil, garlic, pine nuts (or walnuts), Parmesan, and pulse until chopped
- Pesto:
- 1 cup of basil
- 2 garlic cloves, minced
- Handful of walnuts
- 1/4 cup of Parmesan-Reggiano
- 1/4 cup of olive oil
- Salt and pepper to taste
- Fried Mozzarella:
- 1 tomato
- 1 quart of canola oil
- 1 five ounce ball of mozzarella (low moisture, not water packed)
- 2 large egg, beaten
- 1 1/2 cup plain bread crumbs
- 1/2 teaspoon of crushed red pepper
- 1/2 teaspoon of oregano
- Salt

(1) Preheat oven to 350. Grease two muffin tins

- 1-1/2 cups flour
- 1-1/2 tsp baking powder
- 1 tsp salt
- 1/2 cup milk
- 6 tbsp butter
- 3 large eggs
- 1 cup sugar
- 1 tsp vanilla extract
- (Filling)
- 1 packet instant vanilla pudding
- 1 cup milk
- (Chocolate Ganache Glaze)
- 2/3 cups heavy whipping cream
- 3/4 cups chocolate chips
- 1 tbsp light corn syrup
EDAMAME BRUSCHETTA

In food processor, blend 2 cups edamame, mint, parsley, salt and pepper to taste until smooth
- 2 cups, plus cup shelled edamame, at room temperature
- 1 cup fresh mint leaves
- cup fresh parsley leaves
- salt and pepper
- cup olive oil
- 2 packages rice crackers, about 30 crackers
- 4 strips bacon, cooked until crispy and broken into small pieces
- cup finely grated Gruyere cheese
