Hot Spinach Dip

Spinach dip is a favorite for all manner of parties and get togethers, especially during the holidays
- 2 teaspoons olive oil, plus more for baking dish
- 1 medium onion, diced
- 2 garlic cloves, minced
- 2 pounds spinach, cleaned, trimmed, and coarsely chopped
- 1/2 cup milk
- 6 ounces reduced-fat bar cream cheese
- 3 dashes Worcestershire sauce
- 3 dashes hot sauce, such as Tabasco
- 3/4 cups mozzarella, shredded
- Coarse salt and ground pepper
- Baguette slices, breadsticks, or crackers, for serving
Spinach Mac n Cheese

Put a large pot of water on to boil
- 3 tablespoons plain dry breadcrumbs, (see Tip)
- 1 teaspoon extra-virgin olive oil
- 1/4 teaspoon paprika
- 1 16-ounce or 10-ounce package frozen spinach, thawed
- 1 3/4 cups low-fat milk, divided
- 3 tablespoons all-purpose flour
- 2 cups shredded extra-sharp Cheddar cheese
- 1 cup low-fat cottage cheese
- 1/8 teaspoon ground nutmeg
- 1/4 teaspoon salt
- Freshly ground pepper, to taste
- 8 ounces (2 cups) whole-wheat elbow macaroni, or penne
- (I added chopped roasted red peppers)
Honey Mustard Puffs

Cut the puff pastry in half so you have 2 strips
- 1 12 x 12 sheet of puff pastry
- pepperoni or other sliced deli meat
- 6 slices swiss cheese (or any other cheese)
- 1 tsp fresh thyme leaves (dried works too)
- 4 Tbl honey mustard

- And you can add as many other toppings as your heart leads you.

- Grilled pineapple
- Canadian bacon
- Thinly sliced red onion
- Crumbled Feta cheese
- Arugula or other greens (sprinkle on after removing pizza from oven)
- Parmesan shavings
Chocolate Lover's Cheesecake

*Most recipes call for Nabisco Famous Chocolate Wafers but I can never find them
- For the crust:
- 1 1/2 cups finely ground chocolate cookie crumbs*
- 3 tbsp. sugar
- 4 tbsp. unsalted butter, melted
- For the cheesecake:
- 1/2 cup sour cream
- 2 tsp. vanilla extract
- 1 tsp. espresso powder or instant coffee granules
- 8 oz. bittersweet chocolate, finely chopped
- 3 (8 oz.) packages cream cheese, at room temperature
- 3 tbsp. unsweetened cocoa powder, sifted
- 1/4 tsp. salt
- 1 1/4 cups sugar
- 3 large eggs, at room temperature
- For the glaze:
- 3 oz. bittersweet chocolate, finely chopped
- 6 tbsp. heavy cream
- 1 tbsp. unsalted butter, at room temperature

Directions On a lightly floured surface, roll out pastry dough to a 9-by-20-inch rectangle
- All-purpose flour, for work surface
- Puff Pastry, made through the fourth turn
- 12 ounces Parmigiano-Reggiano cheese, grated medium-fine (about 4 cups)
- 1 large egg, lightly beaten
- Coarse salt
QUESO BLANCO

Directions Heat the oil in a saute pan
- 1 tablespoon olive or vegetable oil
- 1/4 cup white onion, diced
- 1 large jalapeno or serrano, seeds and stem removed; diced
- 16 ounces white American cheese, shredded or cubed
- 4 ounces Monterrey Jack cheese, shredded
- 3/4 cup cream or half-and-half
- 1 (10 oz.) can diced tomatoes and green chilies

- 4 tablespoons butter
- 1/4 cup chopped onion
- 1/4 cup chopped celery
- 3 tablespoons all-purpose flour

- 2 teaspoons sugar
- 1 teaspoon salt
- 1/4 teaspoon (scant) ground black pepper
