Easy Lemon Curd

- 3 eggs
- 1 cup sugar
- 1/3 cup lemon juice
- 6 tablespoons butter or margarine, cut into 1/2-inch slices
- 1 tablespoon lemon zest
Cranberry Salad

Dissolve Jell-O in hot water, add cold water and cranberry sauce, celery and nuts
- 1 (6 oz) pkg cherry or cranberry or raspberry Jell-O
- 1 cup hot water
- 1 cup cold water
- 1 can whole cranberry sauce
- 1 cup chopped nuts (I use walnuts)
- 1 stick celery, diced
Raspberry Rice Salad

Cook rice in 2 cups water for 15 to 20 minutes
- 1 cup rice, uncooked
- 2 cups water
- 3 cups milk
- 1 cup sugar
- 1 8 oz container frozen whipped topping
- 2 pkgs frozen raspberries (thawed)
- 2 tblsp cornstarch
Corn Chowder

In a large pot, melt the butter over medium-high heat
- 4 tablespoons (1/2 stick) butter
- 1 whole onion, chopped
- 3 slices bacon, cut into pieces
- 3 whole bell peppers, finely diced (red, yellow, orange)
- 5 ears corn, kernels sliced off
- 1/4 cup all-purpose flour
- 3 cups chicken stock or broth
- 2 cups half-and-half
- 1 heaping cup grated Monterey Jack
- 1 heaping cup grated pepper Jack
- 1/3 cup sliced green onions
- Salt and freshly ground black pepper

- Bring 5 1/2 cups water w/1 stick margarine to boil.
- Add 6 1/2 cups Hungary Jack potato flakes
- 1/4 cup oil
- 2 tsp salt
- 1/4 cup sugar
Lime Sherbert Dessert

Cook sugar, margarine and lemon juice slightly
- Crust:
- 2 cups crushed town house crackers (2 packs)
- 1/4 cup sugar
- 1 stick melted margarine
- Mix above ingredients together and pat in a 9 x 13 pan.
- Ice Cream Layer:
- 1 quart limje sherbert (4 cups)
- 1/2 gallon vanilla ice cream (8 cups)
- Mix together and spread on top of crust.
- Lemon Layer:
- 1 cup sugar
- 6 tblsp margarine
- 4 tblsp lemon juice
- 2 eggs beaten
Chocoate Mousse

- 12 ounces, weight Semi-Sweet Chocolate Chips
- 4 whole Eggs
- Dash Of Salt
- 1 Tablespoon Grand Marnier, More To Taste
- 1 cup Very Hot Strong Coffee
- Fresh Whipped Cream, For Serving
- Thinly Sliced Orange Peel, For Garnish
Mini Vanilla Scones with Vanilla Bean Glaze

For the scones: Preheat the oven to 350 degrees F
- 2 whole vanilla beans
- 3/4 cups heavy cream
- 3 cups all-purpose flour, plus more for dusting
- 2/3 cups granulated sugar
- 5 teaspoons baking powder
- 1/4 teaspoon salt
- 2 sticks (1/2 pound) unsalted butter, chilled
- 1 whole large egg
- 1 whole vanilla bean
- 1/2 cup whole milk, plus more if needed
- 5 cups powdered sugar, sifted, plus more if needed
- Dash of salt
Black Devils Food Cake

Dad's chocolate cake
- Cake:
- 2 cups flour
- 1 3/4 cups sugar
- 1/4 cup cocoa
- 1/2 tsp salt
- 1 tblsp soda
- 1 egg
- 2/3 cup cooking oil
- 1 cup buttermilk
- 1 cup boiling strong coffee
- Never Fail Frosting:
- 1 cup white sugar 1/4 cup milk
- 1/4 cup margarine
- 1/2 cup chocolate chips
- 1/2 cup mini marshmallows
- 1 tsp vanilla
- Preheat oven to 350 degrees. Mix dry cake ingredients together, add egg, oil and buttermilk. Stir well. Add rest of ingredients, adding coffee last. Bake in 9 x 13 inch pan for 40 minutes.

Sprinkle 1 cup flour on counter, pour out dough mixture and knead
- 3 tblsp yeast
- 1 tblsp sugar
- 1 cup warm water
- Mx together and set aside
- 3/4 cup sugar
- 3/4 cup powdered milk
- 1 tblsp salt
- 4 cups flour
- Mix dry ingredients together and mix well
- Add 2 cups warm water and mix until smooth
- Add 3/4 cup lard (melted)
- 3 eggs
- Add the yeast mixture
- Mix until smooth

- 6 cups flour (alternate) with 1 1/2 cups warm water
