Roasted Red Peppers Stuffed with Kale & Rice

To prepare peppers: Preheat oven to 400°F
- 3 medium red bell peppers
- 1 tablespoon extra-virgin olive oil
- 1/4 teaspoon salt
- Freshly ground pepper, to taste
- Filling
- 8 ounces kale, (6 cups lightly packed), trimmed
- 1 tablespoon extra-virgin olive oil
- 1 medium onion, chopped
- 1/2 cup chopped red bell pepper
- 2 cloves garlic, minced
- 3/4 cup cooked short-grain brown rice, (see Tip)
- 1/2 cup freshly grated Parmesan cheese
- 1/4 cup toasted pine nuts, divided (see Tip)
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- Freshly ground pepper, to taste
Dr. Pepper Pulled Pork in the Slow Cooker

Place the chopped onions in the bottom of the slow cooker
- 2 1/2-3 lb pork butt (also known as a pork shoulder)
- 24 oz. (2 cans) Dr. Pepper (or any caramel colored soda pop, each will provide a slightly different flavor)
- 1 medium onion, cut in quarters and then again in half
- 2 garlic cloves, minced
- 1 1/2 teaspoons dry ground mustard
- 1/4-1/2 teaspoon cayenne pepper (depending on personal taste.)
- Salt and freshly ground black pepper
- 1/4 cup apple cider vinegar
- 3 tablespoons Worcestershire Sauce
- bbq sauce of choice
- rolls or buns of choice
Bruschetta

In a small skillet, heat the oil over medium-high heat
- 4 tablespoons olive oil
- 5 cloves garlic, finely minced
- 1 pint red grape tomatoes, halved lengthwise
- 1 pint yellow grape tomatoes, halved lengthwise
- 1 tablespoon balsamic vinegar
- 16 whole fresh basil leaves, plus more as needed, chiffonade
- Salt and freshly ground black pepper
- 1 whole baguette or crusty loaf
- 1 stick butter
Sauerkraut Salad

Drain and snip sauerkraut, reserving liquid
- 1 16 oz. can sauerkraut
- 1/4 cup finely chopped celery
- 1/4 cup chopped onion
- 1/4 cup shredded carrot
- 1/2 green pepper
- 1 small jar pimento
- 3/4 cup sugar
- 1/4 cup vinegar
- 1 tsp celery and/or mustard seed
Spicy Lemon Garlic Shrimp

- 2 pounds raw frozen shrimp, deveined, shells on
- 2 sticks cold butter, cut into pieces
- 1/4 cup fresh parsley leaves
- 1 teaspoon kosher salt
- 1/2 teaspoon crushed red pepper
- 4 cloves garlic, peeled
- 1 whole lemon, juiced

HEAT oven to 325ºF. LINE 13x9-inch pan with foil, with ends of foil extending over sides
- CRUST:
- 60 NILLA Wafers, crushed (about 2 cups)
- 5 Tbsp. butter or margarine, melted
- 3 Tbsp. sugar
- FILLING:
- 4 pkg. (8 oz. each) cream cheese, softened
- 1 cup sugar
- 2 Tbsp. flour
- 1 cup sour cream
- 1 pkg. (3.4 oz.) JELL-O Lemon Flavor Instant Pudding
- 4 eggs
- TOPPING:
- 2 cups thawed COOL WHIP Whipped Topping
- 1 cup each blueberries, sliced fresh strawberries and sliced peeled kiwis

For the cake: Preheat the oven to 350 degrees F
- Cake:
- 4 sticks butter, plus more for greasing
- 8 heaping tablespoons cocoa, plus more for dusting
- 4 cups all-purpose flour
- 4 cups sugar
- 1/2 teaspoon salt
- 2 cups boiling water
- 1 cup buttermilk
- 2 teaspoons baking soda
- 2 teaspoons vanilla extract
- 4 whole eggs, beaten
- Frosting:
- 3 cups heavy cream
- 24 ounces semisweet chocolate, broken into pieces
- 2 teaspoons vanilla extract
Bacon Wrapped Chicken

- Directions:
- Bacon Wrapped, Cream Cheese Stuffed Chicken Breasts: SHARE SO THIS SAVES TO YOUR TIMELINE!!!
- 1 boneless skinless chicken breast
- 2 tablespoons cream cheese
- 1 tablespoon green onion, Chopped
- 2 pieces bacon, Partially Cooked
- Pound out Chicken breast so it is about 1/4" thick.
- Mix together cream cheese and green onions and spread cheese mixture over 1 side of chicken breast.
- Roll CHicken breast up to conseal cream cheese.
- Wrap partially cooked bacon around chicken breast and secure with toothpick.
- Plase on baking sheet and back for about 30 minutes at 375.
- Broil for about 5 minute to crisp bacon.
Chicken Stuffing Casserole

Church luncheon
- Mix together:
- 1 pkg seasoned stuffing mix (not Stove Top)
- 1/2 cup melted margarine
- 1 cup chicken broth
- Put 1/2 of above mixture in a greased 9 x 13 pan.
- Mix together:
- 1/2 cup margarine
- 2 1/2 cups cut up cooked chicken
- 3/4 cup chopped onion
- 1/2 cup chopped celery
- 3/4 tsp salt
Sloppy Joes

Brown hamburger add all other ingredients and simmer for 45 minutes
- 2 lbs hamburger
- 1 can tomato soup
- 1 can chicken gumbo
- 2 tblsp mustard
- 2 tblsp vinegar
- 1 tblsp worchester sauce
- 1/2 tsp salt
- 4 tblsp catsup
- Brown sugar to taste
