Sweet Zucchini Pancakes

Preheat a nonstick skillet or griddle to medium-high heat (350ºF)
- 1/2 cups All-purpose Flour
- 3 Tablespoons Sugar
- 1 teaspoon Baking Powder
- 1/4 teaspoons Baking Soda
- 1/4 teaspoons Salt
- 1 whole Egg
- 1/2 cups Greek Yogurt (nonfat Is Fine)
- 2 Tablespoons Melted Butter
- 1 whole Zucchini, Grated
- 1/2 cups Water Or Milk
Wings (Asian)

Add the plum jelly to a bowl
- 3/4 cup plum jelly
- 1/4 cup soy sauce
- 1/4 cup rice wine vinegar
- 1/4 cup brown sugar
- 2 tablespoons minced fresh ginger
- 2 tablespoons minced red onion
- 1 tablespoon minced garlic
- 1 tablespoon red pepper flakes (less of you'd like less heat!)
- 3 to 4 assorted hot peppers (serranos, jalapenos, and so on), minced fine
- Thinly sliced (julienne) carrots and cucumber, for serving
Chocolate Frosting

Melt butter. Stir in cocoa
- 1 stick (1/2 cup) butter
- 2/3 cup cocoa
- 3 cups powdered sugar
- 1/3 cup milk
- 1 1/4 teaspoons vanilla extract
Chicken Pot Pie

For the chicken: Start by putting the chicken in a pot and covering it with water
- One 2- to 3-pound chicken fryer, cut up
- 3 celery stalks
- 3 medium carrots, peeled
- 1 large yellow onion
- 4 tablespoons (1/2 stick) butter
- 1/4 cup all-purpose flour
- 2 cups low-sodium chicken broth or stock
- 1 chicken bouillon cube
- 1/4 cup white wine, optional
- 1/2 cup frozen peas
- 1 cup heavy cream
- 2 sprigs fresh thyme
- 1 teaspoon kosher salt, or more as needed
- Black pepper
- 1/2 recipe Thyme Pastry, recipe follows
- 3 cups all-purpose flour
- 1 teaspoon salt
- 1 1/2 cups (3 sticks) cold butter
- 1 egg
- 5 tablespoons cold water
- 1 tablespoon distilled white vinegar
- 1 sprig fresh thyme leaves

- 6 cups rolled oats (not quick oats)
- 1/4 cup canola oil
- 4 tablespoons butter, melted, plus more for greasing
- 1 teaspoon salt
- 1 cup brown sugar
- 1/2 cup honey
- 1/4 cup apple juice
- 1/4 cup molasses
- 3 teaspoons vanilla extract
- 1 1/2 cups rice cereal
- 1 cup wheat germ
- 1/2 cup finely chopped pecans
- 1/4 cup roughly chopped almonds
- 8 ounces milk chocolate, melted

- 6 slices day-old bread
- 2 tablespoons butter, melted
- 1/2 cup raisins (optional)
- 4 eggs, beaten
- 2 cups nonfat half & half
- 1/2 cup white sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
Taco Dip

Layer and serve
- st Layer:
- 1 can refried beans
- 1 envelope taco seasoning
- nd Layer:
- 1 ripe avocado
- 8 oz sour cream
- 1 can chopped green chilies
- 1 can sliced black olives
- 2 small tomatoes (diced)
- 2 cups shredded cheese
- Top w/alfalfa sprouts
Cherry Almond Crisp

- Coat four 12-ounce bags frozen tart cherries with:
- 1/2 cup sugar
- 1/4 cup cornstarch
- 2 teaspoons almond extract
- Pour in 9 x 13 and top with:
- 1 cup all-purpose flour
- 1/2 cup packed light brown sugar
- 1/2 cup granulated sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- Dash nutmeg
- 6 oz bag slivered almonds
- Cut in 1 stick cold butter with pastry cutter
- Bake at 350 for 45 minutes
- Serve with whipped topping:
- 2 cups heavy cream
- 2 tablespoons granulated sugar
Pulled Pork

Preheat the oven to 300 degrees F
- 2 onions, peeled and quartered
- 1 whole pork butt (pork shoulder roast)
- Salt and freshly ground black pepper
- One 11-ounce can chipotle peppers in adobo sauce
- 2 cans pop (I use Dr Pepper)
- 4 packed tablespoons brown sugar
BBQ Sauce

Mix in a crock pot, your 2 bottles of Heinz chili sauce, 24 ounce of grape jelly
- 24 oz. grape jelly
- 2 or 3 pkgs. Little Smokey Sausages
- 2 bottles Heinz chili sauce
