White Chocolate Bread Pudding

Preheat oven to 275°F. Arrange bread cubes on baking sheet
- 8 ounces French bread, cut into 1-inch pieces
- 3 1/2 cups whipping cream
- 1 cup milk (do not use low-fat or nonfat)
- 1/2 cup sugar
- 18 ounces good-quality white chocolate (such as Lindt or Baker's),coarsely chopped
- 7 large egg yolks
- 2 large eggs

Heat oven to 350 degrees.
- 1/2 cup butter or margarine
- 4 ( 1 oz ) squares bitter chocolate
- 2 eggs
- 2 cups buttermilk

- 2 cups sugar
Vegan Pot Pie

Using a small stock pot, heat oil and sauté onion and celery until translucent
- 1.5 T olive oil
- 2 cups diced onion
- 1 cup celery
- 1 tsp. minced garlic
- 4 T organic all-purpose flour
- 1 ea. 10oz bag organic frozen peas and carrots
- 2 cups “chicken” chicken stock or strong vegetable broth
- 2 cups diced “Gardien” chicken scallopini
- 1 package Pillsbury pie crust
- Melted vegan butter as needed
Eggnog Breakfast Crumble Crunch Cake

Preheat oven to 350 degrees
- 1 cup all-purpose flour
- 1 cup whole wheat pastry flour
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon nutmeg
- 1/4 teaspoon cinnamon + an extra 1/4 teaspoon
- 1/2 cup loosely packed brown sugar + and extra 1/3 cup
- 1/3 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 6 tablespoons unsalted butter, melted and cooled
- 1 cup eggnog
Pineapple-Ginger Rice with Edamame

In a large, deep skillet, bring broth and ginger to a simmer over medium high heat; simmer for 2 minutes
- 3/4 cup low-sodium vegetable broth
- 1 tablespoon finely grated ginger
- 2 tablespoons brown rice miso or light yellow miso
- 4 cups cooked brown rice
- 2 cups shelled edamame
- 1 1/2 cups chopped fresh pineapple
- 1/4 cup chopped cilantro
HEAVY CREAM SUBSTITUTE

Blend together milk and milk powder
- 3/4 cup Silk vegan soymilk - vanilla
- 1/4 + 1/8 cup Better Than Milk soy powder - vanilla
- 1 tablespoon rice syrup
- 1 1/2 teaspoon vanilla extract
- 1/2 teaspoon coconut extract
- 1/2 cup canola oil
- 1 tablespoon lemon juice

- 1 stick unsalted butter
- 1/2 cup sugar
- 1/2 cup light brown sugar
- 1 teaspoon pure vanilla extract
- 1 egg
- 1 1/2 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup dark chocolate chips (I recommend at least 60% cacao)

Baby Lima Soup with Chipotle Broth

Pick over the beans, looking carefully for any pebbles or dirt clumps; baby limas seem to be magnets for dirt
- 1 pound dried baby lima beans, picked over and rinsed
- 10 cups water
- 1 head garlic, top lobbed off to expose the cloves and loose skins removed
- 2 tablespoons olive oil or clarified butter
- 1 onion, halved top to bottom and sliced into thin crescents
- 1 to 2 chipotles in adobo sauce
- 2 teaspoons fine-grain sea salt
- Squeeze of lime juice (optional)
