Eggplant Bolognese

Bring red wine to a simmer in a large pot over medium heat
- 1 cup dry red wine
- 1 medium onion, chopped
- 2 carrots, chopped
- 1 stalk celery, chopped
- 3 cloves garlic, minced
- 1 medium eggplant (about 1 pound), peeled and chopped
- 12 ounces button or cremini mushrooms, chopped
- 2 teaspoons chopped fresh rosemary
- 3 tablespoons no-salt-added tomato paste
- 1 (28-ounce) can no-salt-added crushed or diced tomatoes
- 1 1/2 cups low-sodium vegetable broth
- 1/4 teaspoon freshly ground black pepper
- 2/3 cup plain unsweetened almond milk
- 3 tablespoons chopped fresh basil, divided
- 1 pound whole wheat or other whole grain pasta

Put about a third of the olive oil in the bottom of a deep pot and turn the heat to medium
- 3/4 cup olive oil, more or less
- 2 onions, peeled and chopped
- 2 carrots, peeled and chopped
- 2 celery stalks, peeled and chopped
- Salt and freshly ground black pepper
- 1 bunch parsley, washed and chopped, thick stems discarded
- 2 or 3 cabbage leaves, chopped
- 1 bunch chard, preferably white, washed and chopped
- 1/4 cup tomato paste
- 3 to 4 cups cooked white beans, like cannelloni, with their liquid if possible

Preheat oven to 350 degrees
- 1 pound unsalted butter
- 1 3/4 cups granulated sugar
- 2 1/4 cups packed light-brown sugar
- 4 large eggs
- 3 cups plus 2 tablespoons pastry flour
- 3 cups bread flour
- 1 tablespoon salt
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 1 tablespoon pure vanilla extract
- 2 pounds bittersweet chocolate, coarsely chopped
Pecan-Crusted French Toast

In a medium bowl, whisk together the soy or rice milk, corn starch and cinnamon
- 1-1/2 cups soy or rice milk
- 3 tablespoons corn starch
- 1 teaspoon cinnamon
- 6 tablespoons chickpea flour or brown rice flour
- 1 cup finely chopped pecans
- 2 tablespoons refined coconut oil, or more as needed for cooking
- 6 to 8 slices vegan whole wheat or whole wheat raisin bread
- Maple syrup for topping

- 8 oz of Sun Dried Tomato Vinaigrette
- 2-3 Fresh tomatoes (or you can use a 16 oz can of diced tomatoes from stock pile)
- 2 Tbsp. Garlic Powder
- Salt, Pepper, Parsley, and Basil (to taste)
- 2 Tbs. Grated Parmesan Cheese
- 1-2 Cups of Shredded Mozzarella Cheese
