country style smashed red potatoes

In a large pot, place the cubed potatoes, cover them with water, and bring to a boil
- 5 lbs. red skin potatoes, washed well, and cut into 1-inch cubes
- water
- 2 cups red onion, diced
- 1 cup shallot, diced
- 2 T. olive oil
- 2 T. garlic, minced
- 1 cup soy milk, rice milk, or other non-dairy milk
- 1/3 cup freshly chopped parsley
- 1 t. salt
- 1/2 t. freshly ground black pepper
Spicy Collard Greens

Heat a large pot over medium high heat
- 4 slices bacon
- 6 cups water
- 2 bunches collard greens, stemmed and roughly chopped
- 1 to 2 jalapeños, thinly sliced
- 1/3 cup apple cider vinegar
- Sea salt and ground black pepper
Chocolate Bread Pudding

- 1-pound loaf French or Italian bread, cut into cubes (about 15 cups)
- 3 cups milk
- 1/4 cup heavy cream
- 1/2 cup coffee-flavored liqueur
- 1 cup granulated sugar
- 1 cup packed light brown sugar
- 1/4 cup cocoa powder
- 1 tablespoon vanilla extract
- 2 teaspoons pure almond extract

- 2 teaspoons olive oil
- 2 large garlic cloves, minced (about 1 teaspoon)
- 1/4 cup pitted, chopped green olives
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/4 teaspoon dried sage
- 1/4 teaspoon freshly ground pepper
- 3/4 cup canned diced roasted red peppers, well drained

- Melt 1/2 stick butter or margarine and pour into the bottome of a 9x13 or 2qt baking dish
