Absolute Mexican Cornbread

1.Preheat oven to 300 degrees F (150 degrees C)
- 1 cup butter, melted
- 1 cup white sugar
- 4 eggs
- 1 (15 ounce) can cream-style corn
- 1/2 (4 ounce) can chopped green chile peppers, drained
- 1/2 cup shredded Monterey Jack cheese
- 1/2 cup shredded Cheddar cheese
- 1 cup all-purpose flour
- 1 cup yellow cornmeal
- 4 teaspoons baking powder
- 1/4 teaspoon salt
Cornmeal Crunch Recipe

Preheat the oven to 400F degrees, racks in the middle
- 1 1/2 cups (medium grind) cornmeal
- fine grain sea salt
- 4 cups yellow onion, chopped (about 3 medium)
- 1/4 cup olive oil
- 1/2 cup Parmesan cheese, freshly grated
- 3 cups water or vegetable broth

Using a little safflower oil, lightly oil (or mist with oil) a 3-Quart casserole dish, and set aside
- 1 T. olive oil, plus additional for oiling pan
- 8 cups red skin potatoes, washed well, unpeeled, thinly sliced, and divided
- 1 cup red onion, finely chopped, and divided
- 1/4 cup nutritional yeast flakes, divided
- salt and freshly ground pepper, to taste

- 3 large, ripe bananas, well mashed (about 1 1/2 cups)

- 1/4 cup coconut oil, barely warm - so it isn't solid (or alternately, olive oil)
- 2 cups rolled oats
- 2/3 cup almond meal
- 1/3 cup coconut, finely shredded & unsweetened
- 1/2 teaspoon cinnamon
- 1/2 teaspoon fine grain sea salt
- 1 teaspoon baking powder

Amaretto-Spiked Vegan Chocolate Mousse Recipe

Pour the chocolate milk into a small pot and bring to a simmer
- 1/2 cup organic chocolate soy milk (for this recipe I like to use Vitasoy Rich Chocolate Soy Milk)
- 9 or 10 ounce bag of semisweet vegan chocolate chips (I've had good success with Tropical Source or Sunspire Brand all-natural brands, NOT carob chips)
- 12 ounces silken tofu
- 1/4 cup Amaretto or almond-flavored liquor
- 1/4 teaspoon natural pure almond extract (I use the Flavorganics Almond Extract for this recipe)
No-Bake Nutter Butter Nutella Pie

Spray 9-inch pie plate with non-stick cooking spray and set aside
- for the crust-
- 24 nutter butter cookies
- 1/4 cup butter
- for the filling-
- 2-8 oz. packages cream cheese, softened
- 3/4 cup granulated sugar
- 1 teaspoon vanilla
- 1/2 cup nutella
- 1/2 cup whipping cream
- for nutella ganache {optional}- <—-Jenna says: you’d be crazy not to make this ganache!
- 1/4 cup nutella
- 1/4 cup cream {or more if you like a thinner ganache}
3-Ingredient Vegan Buffalo Nuggets

1. Gather your ingredients
- 1 1/4 cups of GimmeLean Vegan Sausage (located in the refridgerated section of your grocery store)
- 1/2 cup Panko bread crumbs
- 2 Tbsp hot sauce (Cholula garlic flavor is good)
- (2 Tbsp safflower oil to saute)
- (If you want a sweet taste instead of spicy, substitute sweet BBQ sauce or ketchup for the hot sauce.)

In medium covered saucepan, bring water to a boil
- 1 3/4 cups water
- 1 cup Texmati rice
- 1/4 cup hoisin sauce
- 2 tablespoons white wine
- 2 tablespoons agave nectar
- Pinch of cayenne
- 1/2 cup water
- 1 tablespoon dark sesame oil
- 1 cup sliced scallions
- 1 cup sliced onions
- 1 tablespoon minced fresh ginger
- 1 large carrot, chopped
- 2 cups broccoli florets
- 3 garlic cloves, minced
- 1 cup fresh or frozen corn
- 1 can (8 ounce) sliced water chestnuts, drained
- 1 pound firm tofu, cut into 1/2-inch pieces
- 2 teaspoons arrowroot blended with 1 tablespoon water
- Tamari (optional)

Gently toss tofu cubes in 1/4 cup of the soy ginger sauce
- 1 pound firm tofu, cut in 3/4-inch cubes
- 1 cup prepared soy ginger sauce
- 1 tablespoon canola oil
- 2 stalks celery, thinly sliced
- 1 red bell pepper, cored, seeded and chopped
- 1 green bell pepper, cored, seeded and chopped
- 2 cups 3/4-inch chunks pineapple
- 1 tablespoon rice wine vinegar
- 2 tablespoons chopped cilantro
- 2 green onions, thinly sliced
