Chocolate Pecan Cobbler

Preheat the oven to 350 degrees F
- Caramel Whipped Cream:
- 6 tablespoons butter 1 3/4 cups sugar, divided 1 cup self-rising flour
- 2 tablespoons unsweetened cocoa powder, plus 4 tablespoons
- 1/2 cup whole milk 1 teaspoon vanilla extract 1/2 cup chopped pecans
- 1/2 cup toffee bits 1 1/2 cups boiling water
- Caramel Whipped Cream, recipe follows
- Ice cream and chopped pecans, for serving
- 2 cups heavy cream 1/4 cup sugar 2 tablespoons caramel syrup

Prepare the grill for direct and indirect cooking
- 1 store-bought pizza dough
- Canola oil, for brushing
- 1 1/2 cups mascarpone cheese
- 2 tablespoons honey
- 2 plums, cut in wedges and grilled
- 1 cup raspberries
- 1 cup blackberries
- Confectioners' sugar, for dusting
SHOEPEG CORN SALAD

Toss together with 8 oz. low calorie or regular Italian dressing
- 2 cans shoe peg corn, drained
- 1 green pepper, chopped fine
- 1 bunch green onions, chopped fine
- 1 jar pimento, drained and chopped
- 1/2 c. ripe olives, sliced
- 1 c. grated Cheddar cheese
Cannoli

For this recipe, you will need cannoli forms
- 1 box silken tofu (organic firm)
- 1 container tofutti better than cream cheese
- 1/4 cup + 2 tablespoons organic powdered sugar
- 1 tablespoons vanilla extract
- 2 teaspoons lemon zest
- 1 good squeeze from half of a lemon
- 2 3/4 cups unbleached white flour
- 2 tablespoons sugar
- 1/4 teaspoon cinnamon
- 1/4 cup vegetable shortening
- 1 flax egg (whisk 2 tablespoons flax powder/meal with 3 tablespoons water)
- 2/3 cup marsala wine
- 1 EnerG egg substitute egg (1 1/2 teaspoon EnerG powder with 2 tablespoons water)
- 1 cup vegan chocolate chips
Vegan Banana Pancakes

1. Mix flour, vegan sugar, baking powder, salt and cinnamon together
- 1 cup flour
- 1 tablespoon brown sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- dash cinnamon
- 2/3 cup nondairy milk (I use soy)
- 1/2 banana, very ripe and mashed
- 1 teaspoon vanilla
Delightful and Easy Enchiladas

1. Preheat oven to 375 degrees F
- 1 (1 1/2 ounce) package enchilada sauce mix
- 1 (8 ounce) can tomato sauce
- 1 (15 ounce) can refried beans
- 1 pound fresh spinach
- 1 (16 ounce) can corn
- 1 (4 ounce) can chopped green chilies
- 6 flour tortillas
- 1 cup vegan shredded cheese, divided, optional

- 1 cup dark chocolate chips 73% cacao
- ½ cup grapeseed oil
- 2 tablespoons agave nectar
- 1 tablespoon vanilla extract

Ricotta and Spinach Suffed Manicotti

1. A little trick I learned working in a good Italian restaurant in New Jersey
- 1 pound firm tofu, drained
- 1 (10 ounce) package frozen spinach, thawed and drained
- 1 tablespoon garlic powder or 1-2 cloves fresh garlic, chopped
- 1 teaspoon sea salt and fresh ground black pepper
- 1 teaspoon oregano
- 1/4 cup nurtritional yeast flakes
- 3 or 4 tablespoons olive oil, divided
- 1 (8 ounce) package manicotti noodles
- 1 (24 ounce) tomato sauce (I like Barilla Lasagna and Casserole Sauce)
- vegan mozzarella, shredded, optional (I use Soymage)
Vegan Nacho "Cheese" Sauce

Place all ingredients in a Vitamix or other powerful blender and combine until smooth
- 2 cups cashews
- 1 cup water
- 1/3 cup red bell pepper, with ribs and seeds removed, then diced
- 2 1/2 tablespoons onion, diced
- 2 tablespoons fresh cilantro
- 1 clove garlic
- 1 teaspoon soy sauce or nama shoyu
- 1/4 sea salt
- 1/3 to 1 whole red jalapeno, depending on how hot you want it
- 1 teaspoon nutritional yeast

- 1/4 cup of Earth Balance
- 1 cup sugar
- 2 cups flour
- 1 tsp pink salt
- 1 tsp baking soda
- 1 cup chopped walnuts
