Yummy French Onion Soup

1. Heat margarine in large stockpot over medium heat
- 4 large sweet onions (or just regular onions), sliced
- 2 tablespoons margarine
- 1 teaspoon sugar
- 1 teaspoon salt
- 1 teaspoon dried thyme
- 1/2 tablespoon dried mustard
- 2-3 tablespoons soy sauce
- 1/4 cup red wine ( I used Cabernet)
- 6 cups veggie stock (use a good one!)
- pepper, to taste
Red Velvet Cheesecake

Note on cheesecake making: Cheesecakes are simple and super customizable
- Crust Ingredients:
- 32 chocolate sandwich cookies, finely processed into crumbs
- 5 1/3 tablespoons unsalted butter, melted and cooled
- Small pinch of salt
- Ganache Ingredients:
- 3/4 cups heavy cream
- 10 oz. bittersweet or semisweet chocolate, finely chopped (I used half semisweet and half bittersweet)
- Cake Ingredients:
- 1/4 cup vegetable shortening
- 1 egg
- 1 tablespoon cocoa
- 1/4 teaspoon salt
- 3/4 cups sugar
- 1/2 teaspoon vanilla
- 1/2 cup buttermilk
- 1 1/4 cups flour
- 1/2 teaspoon baking soda
- 1/2 tablespoon white vinegar
- 1 ounce red food coloring
- Filling Ingredients:
- 3 (8 oz.) packages cream cheese, at room temperature
- 1 cup sugar

- 2 oz. cream cheese, at room temperature

- 1 cup raw nuts or seeds
- 2 tsp unpasteurized miso
- few Tbsp water

In a small bowl, combine the walnuts, brown sugar and cinnamon; set aside

- 1 cup chopped walnuts
- 1/3 cup packed brown sugar
- 1 teaspoon ground cinnamon
- 1/3 cup all-purpose flour
- 1/4 cup cold butter, cubed
- 2 medium ripe pears, peeled and sliced (about 2 cups)
- 2 teaspoons lemon juice
- 1/2 cup butter, softened
- 1 cup sugar
- 2 eggs
- 1 teaspoon Spice Islands® pure vanilla extract
- 1-3/4 cups all-purpose flour

- 1/2 teaspoon baking soda

Mike's Deli Famous Eggplant Parmigiana

Preheat oven to 350 degrees F and heat oil in a large pan, Dutch oven or deep-fryer
- Oil
- 2 large eggplants
- All-purpose flour
- 4 eggs

Remove any rind from the cheeses and chop the cheeses into rough 1-inch chunks
- Ingredients
- 1/2 pound Parmesan cheese, not too dry
- 1/2 pound Asiago cheese, not too dry
- 2 tablespoons chopped green onion
- 2 teaspoons minced garlic
- 2 teaspoons dried oregano
- 1 teaspoon freshly ground black pepper

- 1/2 cup dried black-eyed peas
- 6 cups low-sodium chicken broth
- 1 smoked ham hock, about 1 pound

- 1 tablespoon chopped fresh thyme
- 2 cups chopped mustard greens
- 1 cup chopped tomato

- 1/2 cup finely chopped onion
- 2 cloves garlic, minced
- 1/2 pound smoked Creole seasoned sausage (andouille), cut into small pieces
- 2 cups dried red beans, soaked overnight and drained
