Mushroom risotto topped with toasted panko

Heat a large non-stick frying pan with 2 tbsp of olive oil until hot
- 5 - 6 cups chicken broth (depending on how much liquid your rice absorbs to get to al dente texture)
- 1/4 tsp salt
- 1 small yellow onion, chopped
- 4 cloves garlic, minced
- 1 tbsp dried mixed herbs
- 300 g mushrooms (mixed varieties - thoroughly cleaned and diced)
- 2 tbsp + 2 tbsp unsalted butter
- 2 tbsp + 1 tbsp olive oil
- 1/2 cups dry white wine
- 280 g arborio rice (1.5 slightly heaping cups)
- 3/8 cup panko (Japanese bread crumbs - I used a Korean brand panko and it turned out fine)
- grated cheese
- 1 tbsp unsalted butter
Roasted Red Pepper and Basil Pesto Penne

Place garlic and pine nuts in a food processor
- 3 cloves garlic
- 1/3 cup pine nuts
- 1/3 cup grated Parmesan cheese
- 1 cup roasted red bell pepper (fresh or jarred)
- 1 cup basil leaves
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/3 cup extra virgin olive oil
- 1 lb. penne pasta
- 1/4 cup heavy cream, optional
Crack Toffee Bark

Line a large baking sheet with greased parchment paper
- 2 cups pretzels broken into small pieces
- 2 cups pieces of peanut butter cups
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1 1/2 tsp corn syrup
- 1 cup butter (or Earth Balance)
- 1 tsp vanilla extract
- 1/2 tsp salt
- 24 oz. semi sweet chocolate chips (tempered if you would like)
No Bakes

Mix well and drop onto waxed paper or lightly greased cookie sheet
- Combine in a Sauce Pan:
- 1/4 cup butter
- 4 Tbs. Cocoa powder
- 3 Cups Sugar
- 1/2 Cup milk
- Stir constantly over hight heat for 5 minutes or till butter has melted.
- REMOVE FROM HEAT and add:
- 1/2 cup peanut butter
- 3 cups rolled oats
Roasted Spiced Walnuts

- 3 Tbs. sugar
- 2 tsp. ground cinnamon
- 1/2 tsp. ground cardamom
- 1/2 tsp. ground cloves
- 1/4 tsp. fine sea salt
- 1/4 tsp. freshly ground pepper
- 1 egg white
- 2 tsp. grated orange zest
- 2 cups walnut halves
Oatmeal Chocolate Peanut Butter No-Bake Candy Bars

In a medium sized saucepan, melt together peanut butter, honey and coconut oil
- 1 cup peanut butter
- 2/3 cup honey
- 1/2 cup coconut oil (no substitutes, this is what gives its creamy texture and flavor)
- 2 cups oats
- 1 1/4 cups mini chocolate chips
- 3/4 cup dried cranberries
Roasted Mushroom Risotto

Preheat oven to 450°F with a wire rack placed in the middle
- For the risotto:
- 1 1/2 to 2 liters hot chicken stock (in this case, I used mushroom stock for a vegetarian version)
- a handful of dried porcini mushrooms
- olive oil
- 2 small onions, peeled and finely chopped
- 3 sticks of celery, trimmed and finely chopped
- 400 grams risotto rice
- 150 milliliters vermouth/white wine (I used Muscat)
- sea salt and freshly ground black pepper
- 25 grams butter
- 2 nice handfuls of freshly grated Parmesan cheese, plus extra for serving
- zest of 1 lemon
- extra virgin olive oil
- salt and pepper to taste
- For the roasted mushrooms:
- 4 large handfuls of wild mushrooms (shiitake/girolle/chestnut/oyster works well, I used chanterelles), cleaned and if necessary, sliced
- 3 large garlic cloves, minced
- 2 tablespoons olive oil
- salt and pepper to taste
- 30 grams butter, cut into small pieces
- juice of 1 lemon (from the zested lemon for the risotto)
- a few sprigs of fresh chervil, tarragon or parsley, leaves picked and chopped
Vegan Crab Cakes with Wasabi Mayonnaise Recipe

1.Add all the ingredients for mayonnaise into your blender, in the listed order
- Crab Cakes
- 2 1/2 cups zucchini, peeled, shredded and cut into 1/2 inch pieces
- 1/2 cup Brazil nuts, finely ground
- 1/2 cup golden flax meal
- 1 small sweet yellow onion
- 1/4 cup celery, finely minced
- 3 Tbsp nutritional yeast
- 2 1/2 tsp dulse flakes
- 1/4 cup dill, fresh, minced
- 3/4 tsp mustard seed powder
- 1/2 tsp paprika
- 1/2 tsp Himalayan crystal salt
- 1/2 tsp lemon zest
- Wasabi Mayonnaise
- 1 1/2 cups water
- 2 Tbsp lemon juice, freshly squeezed
- 1 Tbsp olive oil
- 1 Tbsp apple cider vinegar
- 2 cups cashewssoaked overnight
- 1 Tbsp garlic, minced
- 1 tsp onion powder
- 3 Tbsp wasabi paste
- 1/4 tsp Himalayan crystal salt
Alabama Lane Cake

1. Preheat oven to 375 degrees f (190 C)
- For the Cake:
- 1 cup (2 sticks) butter, softened at room temperature
- 2 cups granulated sugar
- 1 teaspoon vanilla extract
- 3 1/4 cups cake flour
- 3 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup milk
- 8 egg whites
- For the Filling and Topping:
- 8 egg yolks
- 1 1/4 cups granulated sugar
- Grated rind of 1 orange
- 1/3 cup bourbon (apple, grape or cherry juice may be substituted for the bourbon)
- 1/2 teaspoon mace
- 1 1/4 cups pecans, chopped
- 1/4 teaspoon salt
- 1 cup shredded coconut
- 1 cup raisins
- 1 cup glace cherries, quartered

- 1-2 1-2 to teaspoons vanilla extract, to taste
