- 1/4 bunch Parsley (leaves only)
- 2 cups Lemon Juice
- 1 cup Olive Oil
- 1/4 cup Red Wine Vinegar
- 3 cloves Garlic (sliced)
- 1/4 Cup Fresh Oregano (leaves only - chopped)
- 4 Potatoes (scrubbed and sliced into 1/2-inch thick disks)
- Vegetable Oil (to fry)
- Salt and Pepper

For the chicken: In a low-sided saucepan heat 2 Tbsp oil
- 2 Tablespoons Extra Virgin Olive Oil
- 4 Chicken thighs (bone in/skin off)
- 4 Tablespoons Asian Sweet Chili Sauce
- 4 Tablespoons Extra Virgin Olive Oil
- 1 Tablespoon Sesame Seeds
- Salt & Pepper (to taste)

- 4 Tablespoons Low Sodium Soy Sauce

- 1 cup carrots (cut into matchsticks)
- 1 cup snow peas (cut into matchsticks)
- 1 cup red bell pepper (cut into matchsticks)
- 1 tablespoon toasted sesame seed (to garnish)
- sliced scallions (to garnish)
- cilantro (roughly chopped, to garnish)

- 1/2 cup creamy peanut butter
- 2 limes (juiced)
- 2 tablespoons unseasoned rice vinegar
- 2 tablespoons soy sauce
- 3 tablespoons honey
- 2 cloves garlic (minced)
- 4 teaspoons grated fresh ginger
- 1/3 cup canola oil
- salt and freshly ground black pepper
Easy Chicken Enchiladas

- 12 corn tortillas
- 1 28oz can of red enchilada sauce
- 2 cups (16 oz) mozzarella or mexican mix or cheddar
- 1 1/2 cups meat (optional) shredded beef or chicken

Preheat oven to 350 F. Lightly butter a 9x13x2 inch baking dish
- 1 pound ground pork sausage
- 8 ounces fresh mushrooms, cleaned and sliced
- 2 cups potatoes, cleaned and cut into 1/4- to 1/2-inch cubes
- 1 medium onion, diced
- 8 large eggs
- 1-1/2 cups half-and-half
- 1 teaspoon dry mustard
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon cayenne pepper
- 2 cups grated cheese of choice (cheddar, Colby, Monterey Jack, Pepper Jack), divided
ZUCCHINI SOUP WITH TORTILLA CRISPS

In a soup pot set over medium-low heat, add butter and oil
- 1 tablespoon corn or safflower oil
- 2 tablespoons unsalted butter
- 1 cup white onion, chopped
- 1 cup leeks, white and light green parts, sliced
- 1 jalapeño chile, sliced in half, seeding optional
- 3 pounds green zucchini, ends removed, diced
- 5 cups vegetable broth
- 1 teaspoon kosher or sea salt, more or less to taste
- 1/2 teaspoon black pepper, freshly ground, or more to taste
Compound Butter

1. Place the softened butter in a medium bowl, cut into pieces and add a pinch of salt
- For Herbed Butter:
- 1/2 cup unsalted butter, very soft
- Pinch of salt
- 1 tablespoon minced rosemary
- 1 tablespoon minced sage
- 1 tablespoon minced thyme
- (Or, 3 tablespoons of your favorite herbs)
- For Honey Butter:
- 1 tablespoon honey
- For Vanilla-Cinnamon Butter:
- 1 vanilla bean, split lengthwise, seeds scraped out and added to the butter, pod discarded
- 1 teaspoon ground cinnamon
