- 2 Tbsp unsalted butter
- 2 Tbsp flour
- 1 cup, packed finely shredded jack chese
- 1 cup, packed finely shredded sharp cheddar cheese
- 2/3 cup corn kernels (if using frozen, defrost before using)
- 2 (4 ounce) cans diced roasted green chiles(or combo of fresh roasted, see comments above)
- 2 teaspoons lime juice
- 1/4 to 1/3 cup panko or other breadcrumbs
