Raspberry-almond shortbread cookies

1. In a medium bowl beat butter medium speed for about 30 seconds
- 1 cup butter, softened
- 2/3 cup granulated sugar
- 1/2 teaspoon almond extract
- 2 cups all-purpose flour
- 1/2 cup seedless red raspberry jam
- sugar for sprinkling
- 1 cup powdered sugar
- 3 to 4 teaspoons water
- 1 1/2 teaspoons almond extract
Potato Pancakes with Chunky Granny Smith Applesauce and Cinnamon Creme Fraiche

On a box grater, coarsely shred the onion and potato
- 1 small onion, peeled
- 1 large baking potato (about 1 pound), peeled
- 1/4 cup all-purpose flour
- 1 teaspoon kosher salt
- 1/4 teaspoon freshly ground pepper
- 1 large egg, lightly beaten
- Pinch baking powder
- Canola oil, for frying
- Chunky Granny Smith Applesauce, recipe follows
- Cinnamon Creme Fraiche, recipe follows
- 3 to 6 tablespoons granulated sugar (depending on how sweet or tart you want it)
- 1/2 teaspoon ground cinnamon
- 5 Granny Smith apples, peeled, cored and cut into large dice
- 1 cup creme fraiche
- 1 teaspoon ground cinnamon
Irish Lamb Stew

This thick and delicious Irish stew is made with lamb, potatoes, onions, turnips, carrots, and chopped bacon
- 2 1/2 pounds lamb shoulder or shoulder blade chops, bone-in, trimmed of excess fat
- 6 slices bacon, thickly cut
- 2 pounds potatoes (Yukon gold preferred), peeled, quartered
- 2 large onions, quartered
- 2 large carrots, peeled and cut into 2-inch segments
- 1 turnip, peeled and cut into 1-inch pieces
- 2 heaping tablespoons pearl barley (omit for gluten-free version)
- 1 tablespoon fresh thyme, chopped or 1 teaspoon dried thyme
- Salt and freshly ground black pepper
- 1 quart water or lamb stock, warmed

Dill Potato Salad

- 4-5 lbs. of potatoes
- 3 stalks of celery – sliced thin
- 1 tablespoon of capers – chopped
- 1 tablespoon of caper juice
- 1/4 red or white onion – chopped
- 1 handful of fresh dill – chopped fine
- Dressing
- Juice of 1/2 lemon
- 3 cloves of garlic – minsed
- 1/4 cup Olive oil.
- Salt to taste
