Italian Spaghetti Pasta Salad

Cook the spaghetti according to the package directions in boiling water seasoned with 2 tablespoons of kosher salt
- 1 pound thin spaghetti
- 2 tablespoons kosher salt
- 2 cucumbers, quartered and sliced
- 1 red bell pepper, seeded and chopped
- ½ red onion, thinly sliced
- 10 ounces cherry tomatoes, halved
- 8 ounces mini pepperoni
- 1 4-ounce can sliced black olives, drained
- ½ cup grated Parmesan cheese or pecorino romano
- 1 cup extra virgin olive oil
- ½ cup red wine vinegar
- 2 tablespoons Italian seasoning
- 2 teaspoons sugar
- 1 garlic clove, pressed or finely minced
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
Grilled Artichokes

Chocolate Brownie Cake

Heat oven to 350 degrees
- Cake
- 1 box chocolate cake mix
- 1 box fudge brownie mix
- 4 eggs
- 1 1/4 c water
- 1 c oil
- Ganache
- 1 c heavy whipping cream
- 1 bag (12 oz) semi sweet chocolate morsels
Queso Dip

Heat 1/2 and 1/2 over medium/high heat in a small saucepan
- 3/4 lb white american cheese buy it sliced at the deli counter at your grocery store. Then chop into small squares, finely chopped
- 4 ounces mozzarella cheese shredded
- 1 1/4 cup half-and-half
- 2 tablespoons canned jalapenos chopped, or chopped green chiles
- 1 teaspoon chili powder you could also use cumin if you prefer that taste
- 1/2 teaspoon ground nutmeg optional.
- 1 teaspoon red pepper flakes
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- chopped cilantro tomatoes, and jalapenos for garnish
Skillet Pineapple BBQ Chicken

Heat a large skillet over medium
- 1 Tbsp cooking oil
- 6 boneless skinless chicken thighs* (about 2.3 lbs.)
- Pinch Salt and pepper
- 20 oz. can Pineapple slices in juice
- 1/2 cup BBQ sauce
- 1 jalapeño (optional), sliced thinly
- 2 green onions, sliced

- 1 Oz. Vodka
- 1/2 Oz. Triple Sec
- 1/2 Oz. Rose's Lime Juice
- 1/2 Oz. Cranberry Juice
Bebop's Egg Nog

Pour eggnog, rye and brandy into a punch bowl
- 4 quarts Egg Nog
- 1 quart Rye
- 1/2 pint Brandy
- 6 each Eggs ; separated
- 3 tablespoon Sugar
- Nutmeg
Short Rib Ragu

Heat oven to 325 degrees F
- 2 tablespoons vegetable oil
- 3 1/2 to 4 pounds short ribs ; each about 2-inches long, cut flanken style, across the ribs
- Salt ; and freshly ground pepper
- 1 dried bay leaf
- 2 sprigs fresh rosemary
- 5 sprigs fresh thyme
- 2 sprigs fresh flat-leaf parsley
- 4 small carrots ; diced
- 2 stalks celery ; diced
- 1 medium onion ; diced
- 2 medium shallots ; diced
- 1 tablespoon all-purpose flour
- 2 tablespoons tomato paste
- 1/2 cup ruby port
- 2 cups red wine ; such as cabernet
- 1/2 head garlic ; cloves separated and peeled
- 3 1/2 cups homemade beef stock
- 1 pound pappardelle or other long ; flat pasta
- Chopped ; parsley
- Grated ; Pecorino Romano
Sausage, Peppers and Onions

You can use different colored bell peppers, or just stick with green
- 4 Italian sausage links (sweet, hot, or a couple of each)
- 2 Tbsp olive oil
- 1 green bell pepper, sliced into 2 to 3 inch long strips
- 1 red bell pepper, sliced into 2 to 3 inch long strips
- 1 bell pepper of another color (yellow or orange or purple), sliced into strips 2-3 inches long
- 4 garlic cloves, sliced into slivers
- 1 large sweet or yellow onion, sliced into 1/4-inch half-moons
- 1 small (15 ounce) can of crushed tomatoes
- 1 Tbsp of dried oregano
- 1/2 cup Marsala or red wine (optional)
- 1/2 teaspoon red pepper flakes (optional)
- Salt to taste
Parmesan Roasted Asparagus

Preheat the oven to 400°F / 205°C
- 1 1/2 pounds asparagus, trimmed to 4 – 5 inches
- 2 Tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
- 1/4 cup panko breadcrumbs
