In a large bowl, add the diced tomatoes, corn kernels, diced bell pepper, diced red onion, black beans, black-eyed...
- 3 cups seeded and diced Roma tomatoes (about 1 pound Roma tomatoes)
- 1 – 15-ounce can corn kernels, rinsed and drained
- 1 cup seeded and diced bell pepper, any color (about 1 medium pepper)
- 3/4 cup red onion or shallot, small diced
- 1 – 15-ounce can black beans, rinsed and drained
- 1 – 15-ounce can black-eyed peas, rinsed and drained
- 1 jalapeño, seeded and minced (optional)
- 3/4 cup chopped cilantro (about 1/2 bunch fresh cilantro)
- 1 to 2 avocados, sliced (optional)
- DRESSING
- 1/3 cup olive oil
- 2 tablespoons red wine vinegar
- 2 tablespoons fresh lime juice (about 1 lime)
- 1 teaspoon honey
- 1 teaspoon cumin
- 1 clove garlic, pressed or minced
- 1 to 2 teaspoons salt, or to taste
- 1/4 teaspoon freshly ground black pepper, or to taste
Caesar Dressing

- 2 tablespoons garlic cloves, minced
- 2 tablespoons Dijon mustard
- 1/4 cup fresh-squeezed lemon juice
- 1/4 cup mayonnaise
- 1/2 cup grated Parmesan cheese
- Salt, to taste
- Freshly ground black pepper, to taste
- 1 cup canola oil
Sweet and Spicy Green Beans

Microwave beans following package instructions
- 2 (12-oz) bags fresh trimmed green beans
- 6 cloves fresh garlic, finely chopped
- 6 pitted Medjool dates, coarsely chopped
- 1 lemon, for juice
- 1 tablespoon honey
- 1/8 teaspoon crushed red pepper
- 1 tablespoon extra-virgin olive oil
- 1/2 teaspoon kosher salt
- 1/2 cup chopped pecans, finely crushed
Pizza Dip

Preheat oven to 350. Lightly grease a 9 inch pie plate
- 4 oz. cream cheese
- 1/4 cup sour cream
- 1/4 cup mayonnaise
- 1 cup shredded mozzarella - divided
- 1/2 tsp oregano
- 1/2 cup Parmesan cheese - divided
- 1 cup pizza sauce
- Mini pepperoni slices
- Garlic toast for dipping (recipe below)
Cranberry Lemon Scones

Place rack in middle of oven
- 3 lemons, preferably Meyer
- 2 1/2 cups all purpose flour
- 1/2 cup sugar, plus 3 Tbs if using fresh cranberries
- 1 Tbs baking powder
- 1/2 tsp salt
- 6 Tbs cold unsalted butter, cut into bits
- 1 1/4 cups fresh cranberries, chopped coarse, or 1 1/4 cups dried cranberries or dried cherries
- 1 large egg
- 1 large egg yolk
- 1 cup heavy cream
- Creme fraiche or whipped cream for serving
Parmesan Roaster Cauliflower

Preheat oven to 425 degrees F
- 7 cups cauliflower florets, cut to bite sized pieces
- 3 to 4 tbsp olive oil
- 1 cup Italian bread crumbs
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/3 cup parmesan cheese
Catalina Dressing

- 3 tablespoons onion, minced
- 1 tablespoon garlic,
- 1 teaspoon chili powder
- 2 teaspoons paprika
- Salt, to taste
- Freshly ground black pepper, to taste
- 1 tablespoon Worcestershire sauce
- 2 tablespoons honey
- 1/2 cup ketchup
- 1/2 cup red wine vinegar
- 1 tablespoon Dijon mustard
- 1/2 cup canola oil

Crockpot Cocktail Meatballs

In a saucepan mix together cranberry sauce, chili sauce, Dijon mustard, brown sugar, and lemon juice
- 2 lbs frozen meatballs
- 1 jar chili sauce
- 1 can cranberry jelly
- 2 tbs Dijon mustard
- 2 tbs brown sugar
- 1 tbs lemon juice
Pork Chops with Apricot Sauce

Preheat oven to 375°. Season both sides of pork with salt and pepper
- FOR THE PORK CHOPS-
- 4 6-oz bone-in pork chops, 1-1 1/4" thick
- 2 tbs vegetable oil
- Salt and pepper
- FOR THE APRICOT SAUCE—
- 1 cup diced yellow onion
- 1 Tbsp. minced garlic
- 2 cups low-sodium chicken broth
- 2 Tbsp. apple cider vinegar
- 1/2 cup slivered dried apricots
- 1/4 cup low-sugar apricot jam
- 2 tsp. minced lemon zest
- 2 Tbsp. unsalted butter
- 1 Tbsp. minced fresh thyme
