Honey Mustard Dressing

Add the ingredients into a mason jar
- 1/2 cup stone ground mustard
- 1/2 cup honey
- Salt, to taste
- Fresh-ground black pepper, to taste
- 1 cup extra-virgin olive oil
- 1/2 cup apple cider vinegar
Refrigerator Dill Pickles

1) Combine vinegar, sugar, salt, mustard seeds, coriander seeds and dill seeds in a heatproof bowl
- 1-1/2 cups distilled white vinegar
- 1/4 to 1/3 cup granulated sugar
- 4 teaspoons kosher salt
- 1 teaspoon mustard seeds
- 1 teaspoon coriander seeds
- 3/4 teaspoon dill seeds
- 2 cups hot water
- 2 pounds kirby cucumbers, sliced 1/4-inch thick

- 4 thinly sliced cucumbers
- 1-large sliced red onions
- 1-large sliced green bell peppers
- 1-tbsp salt
- 2-cup white vinegar
- 1 1/2-cups sugar
- 1-tsp celery flakes
- 1-tsp red pepper flakes
Scallops with Lemon Butter Sauce

Step 1 Finely grate lemon rind, reserving 1/4 teaspoon
- 1 large lemon
- 1 1/2 pounds large sea scallops
- 1/4 teaspoon salt, divided
- 1/4 teaspoon freshly ground black pepper, divided
- 1 tablespoon butter, divided
- 3/4 cup dry white wine
- 1 tablespoon water
- 1/2 teaspoon cornstarch
- 1 tablespoon finely chopped fresh basil
Lemon and Olive Chicken

Step 1 Sprinkle chicken with 1 teaspoon each salt and pepper
- 8 bone-in chicken breast halves
- Salt and pepper
- 3 tablespoons olive oil
- 2 lemons
- 2 onions, chopped
- 4 cloves garlic, minced
- 1 cup green olives, pitted and halved
- 2 cups chicken stock or reduced-sodium broth
- 1 teaspoon dried thyme

- 1 cup butter ; softened
- 1 cup packed brown sugar
- 1/2 teaspoon baking powder
- 2 egg yolks
- 1 teaspoon vanilla
- 2/3 cup yellow cornmeal
- 2 cups all-purpose flour
- 1/4 cup red and/or green jalapeño jelly

1 Preheat oven to 350 degrees F
- 1 Tbs olive oil
- 1 1/2 cups onion, chopped
- 3 garlic cloves, minced
- 2 large eggs
- 1/2 cup milk
- 2 tsp dijon mustard
- 1 tsp hot sauce
- 1 1/2 tsp fresh marjoram, or 1/2 teaspoon dried, crumbled
- 1 1/2 tsp fresh thyme, or 1/2 teaspoon dried, crumbled
- salt and freshly ground pepper
- 1 lb chuck (ground beef)
- 1/2 lb veal (optional. Use half pork and beef if you can't find ground veal or don't buy veal)
