Savory Caprese Bread

Preheat oven to 350 degrees and grease an 8x4 inch bread pan
- 1 1/4 cup of all purpose flour
- 1 cup of bread flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 1/4 tsp of salt
- 3 1/2 to 4 oz of cubed, fresh mozzarella cheese
- 2 tbs of chopped fresh basil
- 1/3 cup of chopped sun-dried-tomatoes (not packed)
- 2 eggs
- 2 1/2 tbs grape-seed oil (can use extra virgin olive oil)
- 1 1/4 cups buttermilk
Make Ahead Mango Marguarita

1.Combine chopped mango, limeade concentrate, tequila, triple sec and lime juice in a blender
- 1 mango, cored, peeled and chopped
- 1 12 oz. can of frozen limeade concentrate
- 1 cup tequila
- 1/4 cup triple sec
- juice of 1 lime
- 3-5 cups ice
- lime slices and coarse salt, for serving

- 2 cups miniature marshmallows, divided
- 3 cups semisweet chocolate chips
- 1/2 cup creamy peanut butter or almond butter
- 1 teaspoon vanilla extract
- 1 1/4 cups toasted and chopped almonds or peanuts (or your favorite type of nut), divided
- 1/4 cup mallow bits or additional 1/2 cup miniature marshmallows (optional)

Boneless Braised Short Ribs

Select a pot that will old all the pieces of short ribs
- {serves 6 hearty portions}
- 6 x 8-10 oz. Pieces Boneless Beef Short Ribs (ask your butcher for 6 good sized pieces of Boneless Short Rib remember that the beef will lose weight and volume during the braising process)
- 1/4 C. Canola Oil
- 3 T Sweet Butter
- 2 Lg. Carrots- 1 “ chunks
- 3 Ribs Celery- 1 “ chunks
- 1 Lg. Onion- 1 “ chunks
- 2 Cloves Garlic- lightly smashed
- 2 Sprigs Fresh Thyme
- 1 Bayleaf
- 2 C. Red Wine (I prefer a flavorful Chianti, you do not want to use a wine that you would not want to drink, the better the wine the better the flavor)
- 1 Qt. Rich Beef Stock
- Kosher Salt and Fresh Ground Pepper
Cucumber Salad

Put sliced cucumbers in a strainer and toss with 1 Tbsp salt
- Dressing:
- (This is for a large batch, if you don't want it so big, just cut it in half)
- 6 large cucumbers, sliced thin
- 1 medium tomato diced
- 1 medium onion diced
- 1 Tbsp salt
- 1/2 cup cider vinegar
- 4 Tbsp canola oil
- 2 Tbsp honey
- 1 tsp celery salt
- 1 tsp dried basil
- 1 tsp ground mustard
- 1 tsp garlic powder
- 1/2-1 tsp salt (to taste)
- 1/2 tsp dried oregano
- Couple dashes of cayenne pepper

Set oven to 375°. In large bowl, cream together butter and sugar until light and fluffy
- 1-1/4 cups margarine or butter, softened
- 1-1/4 cups brown sugar
- 1 egg
- 2 teaspoons vanilla
- 1-1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg, ground
- 3 cups quick cooking oats
- 1 cup dried cranberries
Quick Beef Bourguignonne

Heat oil in large saucepan over medium-high heat
- 1 tablespoon olive oil
- 1 1/4 pounds sirloin steak, but into 1 inch pieces
- Kosher salt and pepper

- 3/4 cup (1.5 sticks) unsalted butter, softened to room temperature
- 3/4 cup dark brown sugar
- 1/4 cup granulated sugar

- 2 cups all-purpose flour
- 2 teaspoons cornstarch
- 1 teaspoon baking soda
