Pumpkin Pie

1. Preheat oven to 425 degrees F
- 1 (9 inch) unbaked deep dish pie crust
- 3/4 cup white sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 2 eggs
- 1 (15 ounce) can LIBBY'S® 100% Pure
- Pumpkin
- 1 (12 fluid ounce) can NESTLE®
- CARNATION® Evaporated Milk
Marinated Salmon

This is a very forgiving recipe - if you get distracted or have too much wine - any combination of ingredients work...
- 1/4 cup Olive oil
- 1/4 cup Soy sauce
- 2 ounce White wine ; semi sweet
- Juice of 1/2 lemon
- 2 teaspoon Capers
- 1 teaspoon Caper juice
- Pepper ; to taste
- 1 Garlic clove ; smashed
- 4 6 ounce Salmon steaks
Christmas Pudding

Mix ingredients together. Wet 21 inch square of unbleached muslin
- 2 1/2 cups Flour
- 1 cup Suet
- 1 cup Molasses
- 1 cup Raisins and/or currents, citron or nuts
- 1 teaspoon Salt
- 1/2 teaspoon Baking soda
- 1/2 teaspoon Cinnamon
- Ginger ; just a little bit
- ~~ -- Hard Sauce -- ~~
- Confectioners Sugar
- Butter
- Vanilla ; just a little
Sticky Chicken

Spray your slow cooker with non-stick cooking spray
- 4-5 boneless, skinless chicken breasts (mine were frozen)
- 1 cup barbecue sauce
- 1 cup apricot jam or preserves
- 1 (1 ounce) packet dry onion soup mix
- 2 tablespoons water
Reese's Chip Cookies

Preheat oven to 350º and line baking sheet with parchment paper
- 2 1/4 c. flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 1/2 sticks butter, softened
- 3/4 c. granulated sugar
- 3/4 c. brown sugar
- 1/2 c. peanut butter
- 2 eggs
- 1 tsp. vanilla
- 1 c. semisweet chocolate chips
- 1/2 c. peanut butter chips
- 3/4 c. Reese’s Minis Peanut Butter Cups
Pecan Pie Cake

It's best to make the filling the night before, because you want this to chill really well
- Pecan Pie Filling
- 1/2 cup firmly packed dark brown sugar
- 3/4 cup dark corn syrup
- 1/3 cup cornstarch
- 4 egg yolks
- 1 1/2 cups half-and-half
- 1/8 tsp salt
- 3 TBSP butter
- 1 teaspoon vanilla extract (the real stuff)
- Pecan Pie Cake
- 3 cups finely chopped pecans, toasted and divided
- 1/2 cup butter or margarine, softened
- 1/2 cup shortening
- 2 cups sugar
- 5 large eggs, separated
- 1 TBSP vanilla extract
- 2 cups all-purpose flour
- 1 tsp. baking soda
- 1 cup buttermilk
- 3/4 cup dark corn syrup
Roasted Baby Red Potatoes

Wash baby red potatoes, pat dry, and place them in an 8 x 8 Pyrex dish
- 2 lbs Baby Red Potatoes
- Dried Parsley
- Garlic Salt
- Ground Pepper
- Dried Basil
- Olive Oil
Tortellini Pasta Salad

Combine all dressing ingredients in a jar, cover and shake well
- 1 pound cheese tortellini pasta (either fresh, or dried - cooked according to package's instructions)
- 1 cup cherry tomatoes, halved
- 1/2 red onion, diced
- 1 large cucumber, peeled and chopped
- 1/2 cup canned artichoke hearts, roughly chopped
- 1/2 cup kalamata olives (whole or sliced)
- 1/2 cup crumbled feta cheese (I use reduced fat)
- 1/3 cup packed fresh basil leaves, finely chopped
- Greek Dressing
- 1/2 cup extra virgin olive oil
- 1/3 cup apple cider vinegar
- 1 tablespoon minced garlic
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 2 teaspoons sugar
- 1 tablespoon dijon mustard
- 1/2 teaspoon salt, or to taste
- black pepper, to taste
- juice of 1/2 lemon
Chocolate Cupcakes with Peanut Butter Icing

Preheat the oven to 350 degrees F
- 12 tablespoons (1 1/2 sticks) unsalted butter, at room temperature
- 2/3 cup granulated sugar
- 2/3 cup light brown sugar, packed
- 2 extra-large eggs, at room temperature
- 2 teaspoons pure vanilla extract
- 1 cup buttermilk, shaken, at room temperature
- 1/2 cup sour cream, at room temperature
- 2 tablespoons brewed coffee
- 1 3/4 cups all-purpose flour
- 1 cup good cocoa powder
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon kosher salt
Creamy Shrimp Pasta

You could substitute sauteed chicken for the shrimp or use both
- 3/4 3/4 3/4 lb fettuccini pasta
- 1 1 1 lb large raw shrimp peeled and deveined
- 1 1 1 Tbsp olive oil
- 1/2 1/2 1/2 onion (medium), finely chopped
- 2 2 2 Tbsp unsalted butter
- 1 1 1 garlic clove minced
- 1/3 1/3 1/3 cup white wine I used Chardonnay
- 2 2 2 cups whipping cream
- 1/3 1/3 1/3 cup shredded parmesan cheese
- 1/2 1/2 to tsp Sea salt or to taste
- 1/4 1/4 to tsp black pepper or to taste
- 1/4 1/4 to tsp paprika or to taste
- 1 1 to Tbsp Parsley finely chopped, to garnish
