Strawberry Crumb Bars

The strawberries are baked into the form of a buttery hand-held crumble and are truly irresistible
- 1 1/2 cups sugar, divided
- 1 tsp baking powder
- 3 cups all-purpose flour
- 1/4 tsp salt
- Zest of 1 lemon
- 2 sticks (1/2 lb) cold unsalted butter, cut into pieces
- 1 large egg
- 4 cups fresh strawberries, hulled and quartered
- 4 tsp cornstarch
- Juice of 1 lemon
White Chocolate Cranberry Cake

DIRECTIONS 1. Place cranberries, sugar and water in a saucepan
- 1 cup (6 ounces) fresh or frozen cranberries
- 2 tablespoons granulated sugar
- 1/2 cup water
- 3/4 cup (6 ounces) evaporated milk
- 6 large egg whites, room temperature
- 2 teaspoons vanilla extract
- Red food coloring, 3-5 drops
- 2-1/4 cups (9 ounces) cake flour
- 1-3/4 cups (12-1/4 ounces) granulated sugar
- 4 teaspoons baking powder
- 1 teaspoon fine sea salt
- 6 ounces (12 tablespoons/1-1/2 sticks) unsalted butter, cut into 12 pieces and softened
- White Chocolate Honey Frosting
- 12 ounces white chocolate, chopped
- 8 ounces (16 tablespoons/2 sticks) unsalted butter, room temperature
- 12 ounces cream cheese, room temperature
- 2 tablespoons honey
- 2 tablespoons brandy
Kalyn's Stuffed Cabbage Casserole

Recipe slightly modified from Kalyn's Kitchen Skinnytaste
- Ingredients:
- 2 tsp olive oil, divided
- 1 lb. 95% lean ground beef
- 1 large onion, chopped fine
- 1 tbsp finely minced garlic
- 1/2 tsp. dried thyme
- 1 tsp sweet Hungarian Paprika
- salt and fresh ground black pepper to taste
- 1 1/2 heads green cabbage, coarsely chopped
- 1 can (14.5 oz.) petite dice tomatoes with juice
- 1 can (15 oz.) tomato sauce
- 1/4 cup water
- 2 cups cooked brown rice
- 2 cups low-fat mozzarella cheese (Sargento)
- Preheat oven to 350°F. Spray a large glass casserole dish with non-stick spray. (My dish was 13" x 10")
Summer Spinach Salad

Cook pecans and sugar over low heat until melted, then cool
- Dressing:
- 1 carton of strawberries sliced
- 1 large can of mandarin oranges
- 1 large bag of fresh baby spinach
- 1 cup of chopped pecans
- 2 TBSP sugar
- 1/4 cup vegetable oil
- 2 TBSP sugar
- 2 TBSP white vinegar

- 2 sticks softened butter (NOT margarine)
- 3/4 cup packed light brown sugar
- 1 cup granulated sugar
- 2 large eggs
