Seafood Creole

In a large skillet heat oil; cook tomatoes, onion, green pepper, celery and garlic until crisp-tender
- 1 tablespoon vegetable oil
- 3 tomatoes, peeled, coarsely chopped
- 1 large onion, chopped
- 1 green pepper, chopped
- 1 celery stalk, chopped
- 3 cloves garlic, minced
- 1 1/2 cups water
- 3/4 cup uncooked rice
- 1 teaspoon ground cumin
- 1/2 teaspoon dried thyme leaves
- 1/2 teaspoon Tabasco® pepper sauce
- 1 bay leaf
- 1 1/2 pounds red snapper fillets with skin, cut into 2-inch pieces
- 1/4 cup chopped parsley
Blueberry Cobbler

Preheat oven to 400 degrees
- 1/2 cup sugar
- 1 Tbsp. cornstarch
- 4 cups blueberries, NOT thawed if frozen
- 1 tsp. lemon juice
- 2 Tbsp. butter
- 1 cup flour
- 2 Tbsp. sugar
- 1-1/2 tsp. baking powder
- 1/4 tsp. cinnamon
- 1/4 tsp. salt
- 1/2 cup whole milk
Chicken Bacon Pasta | Plain Chicken

Cook the pasta in boiling salted water until done (according to package instructions)
- 1/2 pound bacon, cooked and roughly chopped
- 1/2 tsp crushed red pepper flakes (or less if you don't want the heat)
- 1 tsp garlic powder
- 1/2 pound penne pasta
- 1/2 cup heavy cream
- 1/4 cup cream cheese
- 1/4 cup grated parmesan cheese
- 2 whole eggs
- 1/4 tsp ground black pepper
- 2 grilled chicken breast, sliced (I marinated the chicken in Lawry's Garlic & Herb marinade)
Ain't No Thing Butta Chicken Wing

Directions For the wings: In a medium bowl, combine all of the spices and reserve 2 tablespoons of the mixture
- 1 tablespoon granulated garlic
- 1 tablespoon cayenne pepper
- 1 tablespoon dry mustard
- 1 tablespoon freshly cracked black pepper
- 1/2 teaspoon ground white pepper
- 2 teaspoons ground cumin
- 4 pounds chicken wings, sectioned
- 6 tablespoons butter, unsalted, divided
- 1 tablespoon minced garlic
- 1 tablespoon minced jalapeno
- 1 (12-ounce) bottle hot pepper sauce (recommended: Crystal)
- 1 tablespoon white vinegar
- 1 tablespoon lime juice
Slow Cooker Cube Steak With Gravy

It is nice to get the cooking done early in the day while the kids are at school
- 1 cup flour
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 6 beef cube steaks
- 3 tablespoons vegetable oil
- 1 large onion, sliced into rings
- 3 cups water
- 1 (3/4 ounce) packet brown gravy mix
- 1 (10 ounce) can cream of mushroom soup
- 1 (1 ounce) packet onion soup mix
Lady and Sons Chicken Pot Pie

Cut each sheet of frozen puff pastry into 1 strips, 8 inches long
- 4 sheets frozen puff pastry
- 1 egg, beaten
- 4 chicken breast halves, or 2 cups leftover cooked chicken
- Paula Deen Seasoned Salt
- pepper
- 2 tablespoon cooking oil
- 1/3 cup melted butter
- 2/3 cup flour
- 1 quart heavy cream
- 1/4 cup chicken base
- 1 tablespoon minced garlic
- 1/2 small yellow onion, minced
- 1 cup frozen green peas, cooked
- 1 cup cooked carrots, chopped
- pinch fresh grated nutmeg (optional)
French Creamy Potato Gratin

preheat oven to 350. rub inside of gratin dish with butter
- 1 small garlic clove, minced
- 2 # large red waxy potatoes
- 2 c. half and half
- 2-1/2 c. (8oz) Swiss cheese
- salt, pepper, and nutmeg
Chicken Soup

Warm a large saucepan over medium-high heat and add the olive oil
- 1 Tbs. extra-virgin olive oil
- 3 medium carrots, sliced
- 1 small yellow onion, finely chopped
- 1 stalk celery, sliced
- 6 cups chicken stock
- 2 cups shredded or diced cooked chicken, homemade (see related recipe at left) or purchased
- 2 cups cooked pasta shapes or rice (optional)
- Kosher salt and freshly ground pepper, to taste
STUFFED ZUCCHINI BOATS

Cut zucchini lengthwise and scoop out the middle, leave behind some meat on the shell
- 4 medium sized zucchini
- 1 onion, minced
- 3 cloves garlic, minced
- 1/4 c. EVOO
- 1/2 t. marjoram or thyme
- 1/2 c. full-bodied red wine
- 4 ripe tomatoes, peeled, seeded and chopped
- 2 t. sugar
- 3/4 c. parmesan
- 2 t. balsamic vinegar
Cocoa Krispies Mini-Football Treats™

- 3 tablespoons butter or margarine
- 1 package (10 oz., about 40) regular marshmallows
- OR
- 4 cups miniature marshmallows
- 1/2 cup peanut butter
- 6 cups Kellogg's® Cocoa Krispies® cereal
- Canned frosting or decorating gel
