Sirloin Burger Soup

In crockpot, combine beef broth and condensed broth with tomatoes, copped carrots, onion, celery, and potato
- 1 can (about 1 1/2 cups) regular beef broth, low fat or not
- 1 can (about 10 1/2 ounces) condensed beef broth
- 1 can (14.5 ounces) diced tomatoes
- 3/4 cup coarsely chopped carrots
- 1 cup chopped onion
- 1/2 to cup thinly sliced celery
- 1 large potato, cut in small cubes, about 1 to 1 1/2 cups
- freshly grated black pepper
- oil
- 2 to 3 lean burgers, formed into patties - frozen burgers are easy for this
- 1 tablespoon freshly chopped parsley
- 1/4 cup frozen corn, optional
- 1/4 cup frozen peas, optional
- salt and pepper, to taste
bechamel sauce

- 2 T butter
- 1 heaping TBSP pancetta or prosciutto, finely chopped
- 1 small onion
- 1 small carrot, minced
- 1 small celery, minced
- 2-1/2 TBSP flour
- 2 c. milk or cream
- 1 bay leaf
- salt and white pepper
- 1 very small pinch nutmeg
Au Gratin Garlic Potatoes Recipe

In a large saucepan, heat milk over medium heat until bubbles form around side of saucepan
- 1/2 cup milk
- 1 can (10-3/4 ounces) condensed cheddar cheese soup, undiluted
- 1 package (8 ounces) cream cheese, cubed
- 1 garlic clove, minced
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon pepper
- 2 pounds potatoes, peeled and sliced
- 1 small onion, chopped
- Paprika, optional
