Grilled BBQ Chicken Flatbreads

Preheat the grill to 500 degrees Fahrenheit
- 2 flatbreads, store-bought or homemade
- 1 red onion, sliced (about 1 cup)
- 1 yellow or red bell pepper, sliced (about 1 cup)
- Pinch black pepper
- 12 ounces boneless skinless chicken breast
- 1/4 cup barbeque sauce*
- 1 tablespoon pineapple juice
- 1/4 cup chopped pineapple, packed in juice
- 1/4 cup shredded Monterey Jack
- 2 slices Canadian bacon, chopped
White Chicken Enchiladas

1. Preheat oven to 350 degrees
- 10 soft taco shells
- 2 cups cooked, shredded chicken
- 2 cups shredded Monterey Jack cheese
- 3 Tbsp. butter
- 3 Tbsp. flour
- 2 cups chicken broth
- 1 cup sour cream
- 1 (4 oz) can diced green chillies
Pepperoni Pasta Salad Recipe

1: Bring a large pot of water to a boil with ½ teaspoon of salt
- 2 cups rotini pasta (uncooked)
- 1/2 teaspoon salt
- 1 onion (chopped)
- 1 cucumber (chopped)
- 1 cup grape tomatoes (sliced in half)
- 1 cup pepperoni (cut in pieces)
- 1 (8 oz) block mozzarella cheese (cubed)
- 1 (2.25 oz) can slice black olives (drained)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Italian seasoning
- 1 cup Italian dressing
Reeses Chocolate Peanut Butter Rice Krispie Treats

In a large bowl, combine cereal and diced Reeses
- 6 cups Cocoa Krispies Cereal
- 16-18 Reeses Peanut Butter Cups, diced
- 5 Tbs butter or margarin
- 3 Tbs light karo syrup
- 1 (10 ounce) package plus 2 heaping cups miniature marshmallows
- 1/3 cup peanut butter
- 1/2 cup chocolate chips
Chicken Caesar Salad Sandwiches Slow Cooker

1. Place chicken in a 3-4 quart slow cooker with 1-2 cups of water, cover and cook on low heat for 4-6 hours
- 2 pounds boneless skinless chicken thighs or breasts
- 1/2 to 1 cup of your favorite Caesar dressing
- 1/2 cup shredded Parmesan cheese
- 1/4 cup fresh chopped parsley (if you don't have fresh use around 2 teaspoons of dried parsley)
- 1/2 teaspoon ground pepper
- 2 cups shredded romaine lettuce
- 12 slider buns or 4-6 regular sized hamburger buns
Sombrero Salad Recipe

Mix together and enjoy! When I make it the night before I wait to put the cheese and dressing on until right before...
- 1 box of pasta (normal size) – cook and run under cold water
- 1 pound taco meat
- 1 green pepper
- 1 onion
- 1 large tomato
- 2 cups cheese (I used Colby jack because that is what I had, but pepper jack may be good too)
- 1 bottle of Catalina dressing
- Some people like black olives…

- 4 slices OSCAR MAYER Bacon, chopped
- 4 small boneless skinless chicken breast halves (1 lb.)
- 4 large carrots (1 lb.), thinly sliced
- 1 large onion, chopped
- 1 cup fat-free reduced-sodium chicken broth, divided
- 2 oz. (1/4 of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, cubed
- 3 cups hot cooked brown rice

In a microwave, melt 1/2 cup butter
- 3/4 cup butter, divided
- 1 package (16 ounces) chocolate cream-filled sandwich cookies, crushed
- 8 cups mint chocolate chip ice cream, softened
- 1-1/2 cups milk chocolate chips
- 1 cup confectioners' sugar
- 3/4 cup evaporated milk
- 1 carton (16 ounces) frozen whipped topping, thawed
