Bacon, Egg & Cheese Biscuit Cups

Directions: 1. Preheat the oven to 400
- Ingredients:
- 4 slices center cut bacon (I used Oscar Meyer Center Cut)
- 3 large eggs
- 3 T skim milk
- Salt & black pepper, to taste
- 1 can Refrigerated Biscuit Dough (10 biscuits, 7.5 oz)
- 1/3 c reduced fat 2% shredded cheddar

- 2 lbs potatoes, mostly peeled and chopped

- 2 tablespoons fresh chives

Halve the tomatoes and onions and lay cut-side up on a cookie sheet along with the peppers and garlic 1
- 16 full size tomatoes, or nearly a produce bag full of roma tomatoes
- (we used roma)
- 2-3 yellow onions
- 20-25 Serrano peppers (remove caps) Note: this many peppers
- makes it hot. Feel free to reduce number of peppers, or scrape the
- seeds and membranes out of them
- 8-10 cloves of garlic
- 1-2 Tbsp salt

- 24 (1/3-inch-thick) baguette slices
- 1/4 cup olive oil, divided
- 3/4 cup finely grated Pecorino Romano (preferably imported)
- 5 large garlic cloves, minced
- Kosher salt
- 2 tablespoons finely chopped flat-leaf parsley

Preheat oven to 375 Degrees
- Dumplings:
- Stew-
- 6 - Large Chicken Breasts + 1 t Badia Poultry Seasoning (or you could use a store bought rotisserie)
- 2 T Vegetable Oil
- 2 C Matchstick Carrots
- 4 Ribs Celery Cut Length wise and then chopped
- 1/4 t Salt
- 12 C Chicken Stock- Preferably homemade
- 1 Can of condensed Cream of chicken soup (not diluted)
- 3 C Milk - Preferably whole milk
- 2 T Badia Poultry seasoning
- 2 t Black Pepper
- 1 T Lawrys Garlic and Parsley Salt
- 1 t Garlic powder
- 2 C Frozen Peas
- 1/4 C Corn Starch
- 3 C All purpose Flour
- 1.5 T Baking Powder
- 1.5 t Salt
- 1/2 t Dried Parsley
- 1.5 C Whole Milk
- 4.5 T Unsalted Butter

- 1/2 pound uncooked turkey sausage, Italian-style, casings removed
- 2 teaspoons olive oil, extra-virgin
- 2 medium yellow pepper, cut into 2-inch long thin strips
- 1 medium uncooked onion, thinly sliced
- 1/2 cup red wine
- 1 1/2 tablespoons garlic, minced
- 28 ounces canned crushed tomatoes, fire-roasted recommended
- 1/2 teaspoon crushed red pepper flakes, or less to taste
- 1/4 teaspoon table salt
- 8 ounces uncooked whole-wheat pasta, fusilli
- 1/3 cup basil, fresh, chopped
