- 2 cans (10 Ounce) Rotel (diced Tomatoes And Green Chilies)
- 1/4 cup Chopped Onion
- 1 clove Garlic, Minced
- 1 whole Jalapeno, Quartered And Sliced Thin
- 1/4 teaspoon Sugar
- 1/4 teaspoon Salt
- 1/4 teaspoon Ground Cumin
- 1/2 cup Cilantro (more To Taste!)
- 1/2 whole Lime Juice
Margarita Birthday Cake

- 1 tablespoon grated lime peel (about 1 lime)
- 3 egg whites
- 1 container (8 oz) frozen whipped topping, thawed
- Additional lime slices and/or green decorating sugars, if desired
Creamy Chicken with Bacon and Penne

Garden Rotini Pasta Salad

Boil pasta While pasta is boiling chop veggies into bite size pieces, place in large bowl Drain and rinse pasta,
- 1 box garden rotini pasta
- 1 large bottle zesty italian salad dressing
- 1 bottle salad seasonings
- 2 cucumbers
- 1 each..red, yellow and orange bell pepper
- 2 tomatoes
- 1 large purple/red onion
- 1-2 bunches of broccoli
- 1 head cauliflower
- 1/2-1 small bag of peeled baby carrots

Bread and Butter Pickles

Combine cucumbers and salt in a large bowl: cover and chill 1 ½ hours

- 1/2 cup butter
- 1 cup brown sugar
- 1 tsp. vanilla
- 1/4 tsp baking soda
- 8 cups crispex cereal
- 1 1/2 cups cashews ( or any nut you like)
New Potatoes with Roasted Garlic Vinaigrette

- 1 1/4 teaspoons kosher salt, divided
- 1/2 teaspoon freshly ground black pepper, divided
- 7 garlic cloves, unpeeled
- 3 pounds small red potatoes, quartered
- 3 tablespoons minced chives
- 2 tablespoons white wine vinegar
- 2 teaspoons Dijon mustard
