Carrot Pumpkin Bars

Pre-heat oven to 350. Grease 15 x 10 pan
- Filling:
- 2 cups flour
- 1 1/4 teaspoon pumpkin pie spice
- 2 teaspoon baking powder
- 1 teaspoon baking soda
- 1 cup sugar
- 1/3 cup light butter/margerine, softened
- 1/2 cup brown sugar
- 2 eggs
- 2 large egg whites
- 1 can (15 oz.) pumpkin pie filling
- 1 cup carrot, finely shredded
- Cream cheese topping:
- 4 oz light cream cheese, softened
- 1/4 cup sugar
- 1 tablespoon skim milk
Aunt Liz's Chicken Spaghetti Casserole

- 2 cups chopped cooked chicken breast
- 2 cups uncooked spaghetti noodles, broken into
- 2-inch pieces (about 7 ounces)
- 1 cup (1/4-inch-thick) slices celery
- 1 cup chopped red bell pepper
- 1 cup chopped onion
- 1 cup fat-free, less-sodium chicken broth
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 2 (10.75-ounce) cans condensed 30% reduced-sodium 98% fat-free cream of mushroom soup, undiluted
- Cooking spray
- 1 cup (4 ounces) shredded cheddar cheese, divided
Fried Dill Pickles

1.Pour vegetable oil to a depth of at least 1/2 inch in medium sized skillet and place over medium high heat
- 1 jar dill pickle spears
- 1 cup flour
- 1/2 cup plain bread crumbs
- 1 tablespoon seasoned salt
- 1 cup milk
- Vegetable Oil to cook in
- Ranch Dressing for dipping
Banana Bread

Preheat the oven to 350°F (175°C)
- 3 or 4 ripe bananas, smashed
- 1/3 cup melted butter
- 1 cup sugar (can easily reduce to 3/4 cup)
- 1 egg, beaten
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- Pinch of salt
- 1 1/2 cups of all-purpose flour
Mac 'n' Cheese

Boil the pasta according to package directions, but reduce the cooking time by one minute
- 8 oz macaroni, or any smallish tube shaped pasta
- 1 tablespoon butter
- 6 oz evaporated milk
- 6 oz freshly grated cheddar cheese
- 1 egg, beaten
- 1 teaspoon dry mustard powder
- 1/4 teaspoon red pepper
- Hot sauce, to taste
- Salt and pepper
The Best Sweet and Sour Chicken

- 3-4 boneless, skinless chicken breasts

- 1 cup cornstarch
- 2 eggs, beaten

- 3/4 cup sugar

- 1/2 cup vinegar
