Marinated Beef Tenderloin with Caramelized Onion and Mushroom Ragout

1. To prepare beef, combine first 6 ingredients in a large zip-top plastic bag
- Beef:
- 1/4 cup finely chopped shallots
- 2 tablespoons balsamic vinegar
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon Dijon mustard
- 1 tablespoon honey 2 garlic cloves, minced
- 1 (2-pound) beef tenderloin, trimmed
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- Cooking spray
- Ragout:
- 1 teaspoon olive oil
- 2 cups thinly sliced sweet onion
- 2 garlic cloves, minced 8 cups sliced mushrooms (about 1 pound)
- 1 tablespoon low-sodium soy sauce
- 1 teaspoon chopped fresh thyme
- 1/4 cup Madeira wine or dry sherry
- 1/3 cup fat-free, less-sodium beef broth
- 1 tablespoon balsamic vinegar
- 1/8 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
Chocolate Peanut Butter Buckeye Cake

For the Peanut Butter Cheesecake: Bake the cheesecake one day in advance so that it has plenty of time to chill in...
- For the Peanut Butter Cheesecake:
- 2 8 ounce packages cream cheese, softened
- 1 cup white sugar
- 1/2 cup creamy peanut butter
- 3 tablespoons all-purpose flour
- 4 eggs
- 1/2 cup milk (I used 1%, but 2% or whole milk would be great too)
- For the chocolate cake:
- 1 box chocolate cake mix, prepared according to package directions (homemade works too, if you're feeling adventurous) and baked in 2 9 inch round cake pans
- For the Peanut Butter Frosting
- 1/2 cup butter, softened
- 1 cup creamy peanut butter
- 4 cups powdered sugar
- 1/3 cup heavy whipping cream
- For the chocolate peanut butter glaze
- 8 ounces semi-sweet chocolate chips
- 3 tablespoons creamy peanut butter
- 2 tablespoons light corn syrup
- 1/2 cup heavy whipping cream

- 4 ounces uncooked linguine
- 1/2 cup 1% low-fat milk
- 3 tablespoons grated fresh Parmesan cheese
- 1 tablespoon chopped fresh parsley
- 1/8 teaspoon salt
- 1/8 teaspoon freshly ground black pepper

- 1/3 cup chopped pancetta (about 1 1/2 ounces)
