- 1/2 cup raisins
- 1/4 cup soft butter
- 1/4 cup packed brown sugar
- 1 pinch salt
- 1/2 cup corn syrup
- 1 egg, lightly beaten
- 1/2 teaspoon vanilla
Chocolate-Peanut Butter Truffles

MICROWAVE chocolate in large microwaveable bowl on HIGH 2 min
- 1 pkg. (8 squares) BAKER'S Semi-Sweet Chocolate
- 1/2 cup PLANTERS Creamy Peanut Butter
- 1 tub (8 oz.) COOL WHIP Whipped Topping, thawed
- 1/4 cup powdered sugar
Cobb Salad

Arrange lettuce in 4 salad bowls
- 8 cups romaine lettuce, chopped
- 1/2 lb deli-sliced turkey, cut into strips
- 1 large tomato, diced
- 1/4 lb swiss cheese, cut into strips
- 4 slices of crisp turkey bacon, crumbled
- 2 large eggs, hard-boiled, chopped
- 6 tbsp blue cheese dressing
Vanilla Glaze

Heat butter until melted. Stir in powdered sugar, vanilla and hot water, stir until all ingredients are smooth
- 1/3 cup butter
- 2 cups powdered sugar
- 1 1/2 tsp vanilla
- 2 to 4 tbsp hot water
Marinated Mozzarella Recipe

In a large resealable plastic bag, combine the first seven ingredients; add cheese cubes
- 1/3 cup olive oil
- 1 tablespoon chopped oil-packed sun-dried tomatoes
- 1 tablespoon minced fresh parsley
- 1 teaspoon crushed red pepper flakes
- 1 teaspoon dried basil
- 1 teaspoon minced chives
- 1/4 teaspoon garlic powder
- 1 pound cubed part-skim mozzarella cheese
Green Cabbage Coleslaw

In a large bowl, toss the cabbage with 1 tbsp of salt
- 2 lbs green cabbage cored, shredded
- Salt and pepper
- Ice water
- 1 tsp. caraway seeds
- 2/3 cup of mayo
- 2 tbsp. white vinegar
- 1 clove garlic, grated
- 1 tsp. dijon mustard
- 2 carrots, grated (1 cup)

- 1/3 cup egg beaters
- 2 10-ounce packages frozen chopped spinach, cooked according to
- package directions, and squeezed dry
- 8 oz. fat-free ricotta cheese (or a rather dry fat-free cottage cheese as opposed to one that is very creamy)
- 1/4 cup fat-free Parmesan cheese
- 3 cloves garlic, minced
- 1/4 tsp freshly ground black pepper
- 1/8 tsp nutmeg
- 3/4 tsp grated orange zest, divided
- 1-1/2 cups canned crushed tomatoes
- 2 tsp flour
- 1/2 tsp salt
- 1/4 tsp sugar
- 1/4 tsp cinnamon

- 4 - 5 tablespoons cornstarch
- 1/2 teaspoon ground cinnamon
