Honey Roasted Veggies

1. Preheat the oven to 375 degrees
- Serves 4
- 2 medium sweet potatoes (1 pound total), peeled,
- halved, and cut into 1/2-inch pieces
- 4 medium carrots, cut into 1/2-inch pieces
- 2 medium parsnips, peeled and cut into 1/2-inch pieces
- 1/2 cup walnut halves
- 1/4 cup honey
- 2 tablespoons extra-virgin olive oil
- Coarse salt and ground pepper
- 3 to 5 sprigs thyme
Veggie Pizza

Heat oven to 375°F. If using crescent rolls: Unroll both cans of dough; separate dough into 4 long rectangles
- 2 cans (8 oz each) Cresent Rolls
- 1 package (8 oz) cream cheese, softened
- 1/2 cup sour cream
- 1 teaspoon dried dill weed
- 1/8 teaspoon garlic powder
- 1/2 cup small fresh broccoli florets
- 1/3 cup quartered cucumber slices
- 1 plum (Roma) tomato, seeded, chopped
- 1/4 cup shredded carrot
- Add any veggies you desire. I like to top it off with shredded cheddar.
Spiced Wine

Mix everything except Brandy in a big pot & heat on low/med OR a crockpot but don't let it boil
- 4 liters (5 & 1/3 bottles 750ml) Red Wine ~ merlot, shiraz or syrah
- 2 cups Sugar
- 2 Cups Orange Juice
- 2 Oranges, sliced thin
- 15 whole cloves
- 1 lemon, sliced thin
- 6 Cinnamon sticks
- 3/4 tsp all spice
- 1 to 2 cups of Brandy or Vodka
Grilled Asparagus with Spicy Ranch Dressing

Snap the tough tips of the asparagus then squeeze the lemon over the asparagus
- 1 -2 lb fresh asparagus
- 1 lemon
- salt & pepper
- 1 cup mayonnaise
- 1/4 buttermilk or 1/4 milk
- 1 envelope ranch dressing mix (I use H. Valley)
- 1 small red onion, sliced thin
- 2 tablespoons chopped fresh basil (or any herb)
- 1 lemon, divided
- red pepper flakes (or hot spice you favor )
Herbed Roasted Chicken

Preheat oven to 450 degrees F
- 5 sprigs rosemary, picked and finely chopped, about 2 tablespoons
- 10 sage leaves, picked and finely chopped, about 2 tablespoons
- 3 cloves garlic, smashed and finely chopped
- Pinch red pepper flakes
- 4 tablespoons extra-virgin olive oil, plus more for drizzling
- 2 (3 to 3 1/2-pound) whole chickens
- Kosher salt
- 1 large or 2 small onions, cut into 1/2-inch dice
- 1 large or 2 small carrots, peeled and cut into 1/2-inch dice
- 3 ribs celery, cut into 1/2-inch dice
- 2 bay leaves
- 1 bundle thyme, about 10 sprigs tied together with string
- 4 cups rich chicken stock
- 1 1/2 cups dry white wine
- Special equipment: butcher's twine

- 1 cup butter, melted
- 3 cups white sugar
- 1 tablespoon vanilla extract
- 4 eggs
- 1 1/2 cups all-purpose flour
- 1 cup unsweetened cocoa powder
- 1 teaspoon salt
- 1 cup semisweet chocolate chips

- 1 1/4 pounds ground chicken
- 1 Vidalia onion,finely chopped
- 1 (4-oz) can chopped mild green chilies
- 1 (1-oz) package saltfree taco seasoning
- 2 garlic cloves, minced
- 1 cup reduced-fat shredded sharp cheddar cheese
- 2 tablespoons reducedfat sour cream
- 1/4 cup fresh cilantro,chopped
- 4 scallions, finely chopped
- 16 (9x14) sheets frozen phyllo dough, thawed

Filet Mignon with Shallot Butter

Wine Shallot Butter adds extra flavors and depth to deliciously tender filet mignon
- SHALLOT BUTTER
- 2 teaspoons vegetable oil
- 1 small shallot, finely chopped
- 1/8 teaspoon dried rosemary
- 1/4 teaspoon dry red wine
- 2 tablespoons butter (no substitutions), room temperature
- 1 tablespoons chopped fresh parsley leaves
- FILETS
- 1 tablespoon vegetable oil
- 2 (about 1 inch thick and 6 ounces each) beef tenderloin (filet mignon) steaks
- Salt and pepper, to taste
Beef Bruschetta Skillet

COOK meat in hot oil in large nonstick skillet on medium-high heat 2 min
- 1 lb.beef sirloin steak, cut into thin strips
- 2 tsp. oil
- 2 large tomatoes, chopped
- 1 can (14 oz.) beef broth
- 4 clovesgarlic, minced
- 1 tsp. dried basil leaves
- 1-1/2 cups instant white rice, uncooked
- 1/2 cup KRAFT Shredded Mozzarella Cheese
