Chili cheese fries

Preheat oven to 450ºF. Place the potatoes onto a baking sheet
- 4 very large Idaho potatoes, cut lengthwise into 6 wedges
- 2 T grill seasoning
- 2 T plus 1/4 C extra-virgin olive oil (EVOO), plus additional, divided
- 2 to 2 1/2 lbs lean ground sirloin(turkey or chicken)
- 1 large onion, chopped
- 3 to 4 cloves garlic, grated
- 1 jalapeño pepper, seeded and chopped
- 2 T chili powder
- 2 t ground cumin
- Salt and pepper
- 3 T tomato paste
- Hot sauce, to taste
- 2 T Worcestershire sauce
- 1 bottle dark beer, such as Negro Modelo, or 1 1/2 cups beef or chicken stock
- 3 T butter
- 3 T flour
- 3 T yellow mustard
- 1 C milk
- 1 C chicken stock
- 1 1/2 to 2 C shredded cheddar cheese
- 2 T red wine vinegar
- 1 head romaine lettuce, chopped
Fried chicken w/ ranch dip

In a large bowl, mix together the buttermilk, garlic, hot sauce, parsley, dill, chives and lemon juice
- 4 C buttermilk
- 2 cloves garlic, grated
- A few dashes of hot sauce
- 4 T fresh flat-leaf parsley, chopped
- 4 T fresh dill, chopped
- 2 T fresh chives, chopped
- Juice of 1 lemon
