  • 4 very large Idaho potatoes, cut lengthwise into 6 wedges
  • 2 T grill seasoning

  • Salt and pepper
  • 3 T tomato paste
  • Hot sauce, to taste
  • 2 T Worcestershire sauce
  • 1 bottle dark beer, such as Negro Modelo, or 1 1/2 cups beef or chicken stock
  • 3 T butter
  • 3 T flour
  • 3 T yellow mustard
  • 1 C milk
  • 1 C chicken stock
  • 1 1/2 to 2 C shredded cheddar cheese
  • 2 T red wine vinegar
  • 1 head romaine lettuce, chopped
