Beef Chili

Season beef with salt and pepper
- 1 pound beef round, trimmed and cut into 1/2-inch chunks
- Salt & freshly ground pepper to taste
- 1 1/2 tablespoons canola oil, divided
- 3 onions, chopped
- 1 green bell pepper, seeded and chopped
- 1 red bell pepper, seeded and chopped
- 6 cloves garlic, minced
- 2 jalapeno peppers, seeded and finely chopped
- 2 tablespoons ground cumin
- 2 tablespoons chili powder
- 1 tablespoon paprika
- 2 teaspoons dried oregano
- 12 ounces dark or light beer
- 1 28-ounce can diced tomatoes
- 8 sun-dried tomatoes (not packed in oil), snipped into small pieces
- 2 bay leaves
- 3 19-ounce cans dark kidney beans, rinsed
- 1/4 cup chopped fresh cilantro
- 2 tablespoons lime juice
Stuffed Sweet Dumpling Squash

Heat oven to 400 degrees. Remove and discard top third of each squash, as well as the pulp and seeds
- 10 small (about 12 ounces each), sweet dumpling squash or acorn squash
- 1/2 cup plus 2 tablespoons packed light-brown sugar
- Zest of 2 oranges, finely chopped
- 1 teaspoon ground ginger
- Orange Ginger Sweet Potato Puree
- 2 tablespoons unsalted butter
- 6 tablespoons granulated sugar
- 1 pint fresh kumquats
- 10 fresh sage, leaves

Mac and Cheese - Healthy

Preheat the oven to 350 degrees
- 12 ounces whole wheat mini pasta shells (these hold the cheese better than elbows)
- 1 cup soy milk
- 1 cup freshly shredded Parmesan
- 1 cup reduced fat sharp cheddar cheese, shredded
- 1 cup frozen butternut squash, thawed
- 1 teaspoon salt
- 1 teaspoon dry mustard
- 1/2 teaspoon pepper
- 1/2 teaspoon Worcestershire sauce
- 1/2 tsp. chili powder or a few dashes of Tabasco sauce
- 2 tablespoons whole wheat bread crumbs
- 2 tablespoons reduced fat Monterey jack cheese, shredded
Apple Slaw with Grape Dressing

Heat oven to 350 degrees. Spread walnuts on baking pan
- 1/2 cup (about 2 1/2 ounces) walnut halves
- 3/4 cup (about 4 ounces) loose Concord grapes
- 2 tablespoons walnut oil
- 1/4 cup freshly squeezed lemon juice, (2 lemons), plus 2 lemons, cut in half
- Salt and freshly ground black pepper
- 6 Cortland or Granny Smith apples
- 1 cup (6 ounces) loose green grapes, halved and pitted
- 1 cup (6 ounces) loose red grapes, halved and pitted
- If Concord grapes are not available, substitute one-fourth cup Concord grape juice combined with one-half cup red grapes.
Zesty baked Chicken Wings and blue cheese dip

Baked Wings: Put first eight ingredients (through lemon zest) in a large bowl, and whisk until combined
- Bleu Cheese Dip:
- 3 tablespoons olive oil
- 1 tablespoon Dijon mustard
- Dash of cayenne pepper
- 1 teaspoon finely minced garlic
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon lemon juice
- 1/2 teaspoon lemon zest
- 16 chicken wings, halved at the joint and with the tip removed
- Cooking spray
- 1 cup grated fresh Parmesan
- 6 tablespoons chopped fresh parsley
- 11/2 cup dried whole-wheat breadcrumbs
- 1 container (8 ounces) reduced fat vegetable cream cheese, softened
- 1 cup reduced fat sour cream 1 cup crumbled blue cheese (about 4 ounces)
- 1 tsp. garlic powder
- 1/4 tsp. freshly ground black pepper
- 1 tsp. minced fresh parsley
- 1 tsp. minced fresh dill weed
