Chicken Fajitas - Jamie Oliver's Version

1) Put grill pan on high heat
- 1 red bell pepper, cut into strips
- 1 medium red onion, sliced
- 2 skinless, boneless chicken breasts, sliced into small strips
- 1 tsp smoked paprika
- small pinch of ground cumin
- 2 limes, cut in half
- olive oil
- sea salt & ground pepper
- 4 tortillas
- 1/2 cup sour cream
- 1 cup guacamole
- 4 oz Cheddar cheese
- 1/2-1 fresh red or green chile, finely chopped
- 15 ripe cherry or grape tomatoes, chopped
- small bunch of fresh cilantro, chopped
- sea salt & ground pepper
- 1 lime
- extra virgin olive oil
Chicken Kabobs with Peanut Sauce

1) In large glass bowl, mix chicken, soy sauce, 1 Tbsp vegetable oil, brown sugar, ground ginger & garlic
- 1 lb chicken breast or tenders, cut into 3/4-inch pieces
- 1/4 cup soy sauce
- 1 Tbsp vegetable oil
- 1 tsp packed brown sugar
- 1/4 tsp ground ginger
- 1 clove garlic, minced
- 1 Tbsp vegetable oil
- 1/4 cup onion, finely chopped
- 1/3 cup peanut butter
- 1/3 cup water
- 1 Tbsp lemon juice
- 1/4 tsp groun corriander
- 4 drops red pepper sauce
Balsamic Chicken

1) Rinse the chicken & pat dry
- 6 boneless, skinless chicken breast halves
- 1 1/2 tsp fresh rosemary leaves, minced or 1/2 tsp dried
- 2 cloves garlic, minced
- 1/2 tsp ground black pepper
- 1/2 tsp salt
- 2 Tbsp extra-virgin olive oil
- 4-6 Tbsp white wine (optional)
- 1/4 cup balsamic vinegar

- 1 2/3 cup granulate sugar
- 1 cup vegetable oil

- Place chicken breasts in the bottom of your slow cooker
- 1 pound of chicken breasts (uncooked...frozen or thawed, it doesn't matter if you're using the slow cooker)
- 4 cups of water
- 2 cans of cream of chicken soup
- 1 tablespoon black pepper
- 1 can of refrigerated biscuits (I use Grands)
