Slow Cooker Korean Beef

1. Combine all ingredients in slow cooker except for cornstarch, green onions and brown rice
- 3 lbs chuck roast
- 1 cup beef broth
- 1/2 cup soy sauce
- 1/2 cup brown sugar
- 4 cloves garlic, minced
- 1 Tbsp rice wine vinegar
- 1 Tbsp ground ginger
- 1/2 tsp onion powder
- 1/2 tsp ground pepper
- 1 Tbsp hot sauce
- 2 Tbsp cornstarch
- 1 bunch green onions, chopped
- Brown rice, cooked
Instant Pot Chicken Cacciatore

1. Select the saute function on your Instant Pot
- 2 lbs chicken breast or thighs, either one is fine
- 2 tbsp avocado oil or olive oil
- 1 medium sized yellow or white onion diced
- 2 cloves garlic minced
- 1 14 oz can diced or pureed tomatoes
- 1/4 cup red wine vinegar
- 1 tsp dried oregano
- 1 tsp paprika
- 1 tsp dried rosemary
- 1 tsp dried thyme
- 1 tsp salt
- 3 tbsp tomato paste
- 1 large green bell pepper diced
- 8 oz sliced mushrooms
- 1/2 cup diced marinated artichoke hearts
- 3/4 cup chicken broth*
- 1 tbsp fresh thyme to serve and garnish optional
- 2 tbsp fresh basil to serve optional
- Salt and pepper to taste

1) In medium bowl, combine sour cream, cream cheese, & ranch powder
- 12 oz sour cream
- 8 oz cream cheese, softened
- 1 oz Hidden Valley Ranch dressing dried powder
- 1 oz Taco Seasoning (1 pkg)

- 1 can (14.5 oz) diced tomatoes
- 2 cups carrots, chopped
- 2 cups potatoes, chopped
- 1.5 cups celery, chopped
- 1 white onion, diced
- 3-4 cloves garlic, minced
- 1 Tablespoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 bay leaves
- 4 cups vegetable stock ( I prefer low sodium broth)
- 2 cups water
- 3 cups V8 ( or tomato juice)
- 1 can (15 oz) red kidney beans, drained and rinsed
- 1 can (15 oz) cannellii beans, drained and rinsed
- 1 1/2 cups zucchini, diced
- 1 cups tubular (ditalini) pasta
- 1 can (15 oz) green beans, drained

Slow Cooker Sausage & Potato Soup

- In a large skillet over medium-high heat, brown your sausage in a tablespoon or so of EVOO
- 1 pound bulk Italian sausage (pork, chicken or turkey sausage work great!)
- 2 Russet potatoes, peeled and chopped into chunks
- 1 onion, chopped
- 1 (28 oz) can whole peeled tomatoes (I used San Marzano)
- 1 (10 oz) can of Rotel Tomatoes
- 2 cups chicken stock
- Grated Parmesan cheese to garnish
- Extra Virgin Olive Oil (EVOO)
- Salt and Pepper

1) Combine seltzer, raspberries, mint, & Chambord in small pitcher
- 2 cups seltzer
- 2/3 cup frozen raspberries
- 2 sprigs fresh mint
- 3 oz Chambord

1) Preheat oven to 350. 2) Lightly spray mini-muffin pan with cooking oil
- 1 pkg (2.5 oz) processed ham or smoked turkey, finely chopped
- 2 Tbsp onion, finely chopped
- 1/2 cup (2 oz) shredded Swiss or cheddar cheese
- 1 egg
- 1 Tbsp snipped fresh parsley
- 1 1/2 tsp Dijon mustard

1) Heat oil in nonstick 10" skillet or 3-qt saucepan over medium-high heat
- 2 Tbsp olive oil
- 1 medium onion, chopped (1/2 cup)
- 1 cup uncooked Arborio or regular long-grain rice
- 1 Tbsp dry white wine or chicken broth
- 3 1/2 cups chicken broth, warmed
- 1/2 cup ricotta cheese
- 1/4 cup shredded mozzarella cheese (1 oz)
- 1/4 cup crumbled Gorgonzola or blue cheese (2 oz)
- 1/4 cup grated or shredded Parmesan cheese
- 1 Tbsp chopped fresh parsley
Slow Cooker Pulled Pork Sandwiches

- In your slow cooker, place your pork and onion pieces inside
- 1 (3 to 5 pound) pork shoulder (also called pork butt or pork roast)
- 1 large onion, chopped into big chunks
- 2 cans of soda, not diet (I have used both Coca-Cola and Dr. Pepper)
- 1 (12 to 18 oz) bottle of your favorite BBQ Sauce (Andrea and I use Sweet Baby Ray's)
- Chopped green onions to garnish, optional
- Buns if you're making sandwiches
