- 1 Tbsp Mexican spice blend
Wonton Fruit Cups

1) Preheat oven to 350. 2) Using 12-cup muffin tin (or two 6-cup tins), line each cup with a wonton wrapper

- 1 red bell pepper, chopped
- 1 (4 oz) can of chopped green chiles
- 8 about 8 green onions, chopped
- 6 ounces of goat cheese, crumbled

- 1 1/2 cups of your favorite BBQ sauce

Better Than Sex Ham Sandwiches

1) Preheat oven to 350 2) Slice the rolls and place the hame & cheese in the rolls to make the sandwiches

1. Heat medium pot of salted water to boiling on high
- 1 lb ground pork
- 1 cup polenta
- 28 oz can crushed tomatoes
- 4 cloves garlic, minced
- 1 bunch broccolini
- 1 large bunch parsley, finely chopped
- 3 Tbsp butter
- 1/2 cup part-skim ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/3 cup Panko breadcrumbs
- 1/2 tsp dried oregano
- 1/4 tsp dried thyme
- 1/4 tsp ground coriander
- 1/8 tsp whole fennel seeds

- 2 ears of corn, kernels removed
- 2 summer squash, halved lengthwise, cut into 1/2" pieces
- 1 bunch parsley, roughly chopped
- 1 cup part-skim ricotta cheese
- 1 Tbsp white wine vinegar
- 1/8 tsp crushed red pepper flakes
- 2 Tbsp grated parmesan cheese
