1. In a large skillet, heat oil over medium heat

- 5 5 1-3/4 bone-in chicken thighs (about 1-3/4 pounds), skin removed
- 1/3 1/3 1/3 cup water
- 1/4 1/4 1/4 cup packed brown sugar
- 2 2 2 tablespoons orange juice
- 2 2 2 tablespoons reduced-sodium soy sauce
- 2 2 2 tablespoons ketchup
- 1 1 1 tablespoon white vinegar
- 4 4 4 garlic cloves, minced
- 1/2 1/2 1/2 teaspoon crushed red pepper flakes
- 1/4 1/4 1/4 teaspoon Chinese five-spice powder
- 2 2 2 teaspoons cornstarch
- 2 2 2 tablespoons cold water
- Sliced green onions
- Hot cooked rice, optional
- 2 2. to 1 5 small bowl, mix cornstarch and cold water until smooth; stir into pan. Bring to a boil; cook and stir 1 minute or until sauce is thickened. Sprinkle with green onions. If desired, serve with rice. Yield: 5 servings.

- Salt and freshly ground black pepper
- 2 cups all-purpose flour, seasoned with salt and pepper

- 2 cups panko bread crumbs
- 1 cup vegetable oil or pure olive oil
- Tomato Sauce, recipe follows
- 1 pound fresh mozzarella, thinly sliced
- 1/4 cup freshly grated Parmesan
- Fresh basil or parsley leaves, for garnish
- 2 tablespoons olive oil
- 1 large Spanish onion, finely chopped
- 4 cloves garlic, smashed with some kosher salt to make a paste
