Classic Bananas Foster Recipe

- 5 medium firm bananas
- 1 cup packed brown sugar
- 1/4 cup butter, melted
- 1/4 cup rum
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/3 cup chopped walnuts
- 1/3 cup flaked coconut
- Vanilla ice cream or sliced pound cake
Maple Bourbon Barbecued Chicken

Combine all marinade ingredients in a bowl, mix well
- 4 chicken breasts (bone-in, skin on)
- 1/2 cup bourbon
- 1/4 cup maple syrup
- 1 heaping tbsp whole grain mustard
- 1-2 cloves garlic (I used two)
- 1 tsp each salt and pepper
Four-Cheese Chicken Fettuccine

Cook fettuccine according to package directions
- TOPPING:
- 8 ounces uncooked fettuccine
- 1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
- 1 package (8 ounces) cream cheese, cubed
- 1 jar (4-1/2 ounces) sliced mushrooms, drained
- 1 cup heavy whipping cream
- 1/2 cup butter
- 1/4 teaspoon garlic powder
- 3/4 cup grated Parmesan cheese
- 1/2 cup shredded part-skim mozzarella cheese
- 1/2 cup shredded Swiss cheese
- 2-1/2 cups cubed cooked chicken
- 1/3 cup seasoned bread crumbs
- 2 tablespoons butter, melted
- 1 to 2 tablespoons grated Parmesan cheese
Simple Savory Pork Roast

Place roast and onion in slow cooker
- 3 boneless pork loin roast, trimmed of fat
- 1 large onion
- 1 bay leaf
- 2 tbs. soy sauce
- 1 tbs. garlic powder
Kahlua Coffee BBQ Sauce

Place shallots, garlic and 3 tbsp of the ketchup in a food processor and blend into a paste
- 1/2 c brewed coffee, not instant
- 2/3 c organic ketchup
- 1/2 c plus 2 tbsp Kahlua
- 3 large shallots, peeled
- 3 cloves garlic, peeled
- 1/2 cup dark brown sugar
- 1/3 cup sweet chili sauce
- 1 tbsp tamari
- 1/2 tsp ground ginger
- 2 tsp ancho chili powder
- 1-2 tsp sea salt
Polish Kielbasa and Cabbage Soup

Saute kielbasa in a large soup pot over medium heat for 5 minute
- 1 lb. polish Kielbasa, sliced into 1/4 inch rounds
- 2 cups onions, thinly sliced
- 4 cups green cabbage, shredded
- 1 tbs. garlic, minced
- 6 cup chicken broth or vegetable stock
- 2 cups potatoes, peeled and diced
- 1/2 to 1 tsp. salt according to taste
- 1/2 tsp. pepper
Curried Coconut Soup with Chicken

For a lighter meal, you can omit the rice noodles; the calories will decrease to about 230
- 2 teaspoons canola oil
- 1/2 cup thinly sliced shallots
- 4 teaspoons Thai red curry paste
- 1 tablespoon minced fresh garlic
- 4 cups unsalted chicken stock (such as Swanson)
- 1 cup light coconut milk
- 2 cups chopped skinless, boneless rotisserie chicken breast
- 2/3 cup thinly sliced cucumber
- 1/2 cup torn fresh basil
- 2 teaspoons sambal oelek (ground fresh chile paste)
- 1 teaspoon dark sesame oil
- 2 cups cooked rice noodles
- 4 lime wedges
Cherry Chocolate Chip Crinkle Cakes

- 3/4 cups butter
- 1 cup sugar
- 2 eggs
- 1 tsp vanilla extract

Bourbon Basted Pork Chops

Cut lemon in half. Squeeze juice from both halves into a small saucepan; add lemon halves
- 1 lemon
- 1/2 cup soy sauce
- 3 tbs. butter or margarine
- 2 tbs. bourbon
- 1 tbs. minced onion
- 1/4 tsp. hot sauce
- 1/8 tsp. salt
- 1/8 pepper
- 4 one inch thick rib pork chops, trimmed
Favorite Carne Con Papa or Cuban Beef Stew

This hearty beef stew is usually served over rice, but can be enjoyed alone as well
- 3 to 4 potatoes, peeled and cut into chunks
- 2 1/2 lbs. of beef cubes for stew
- 1 large white onion, chopped into fairly large chunks
- 1 red and 1 green pepper
- 1 tsp. cumin
- 12 green olives stuffed with pimento
- 1 to 2 tbs. capers, according to taste
- 2 tbs. dried parsley
- 1 tsp. oregano
- 1/3 cup raisins, yellow or dark (optional)
- 2 tbs. garlic powder
- 1 tbs. oregano
- 8 oz. tomato sauce
- 1 packet of Sazon Goya with cilantro and achiote
- 1 to 2 tbs. balsamic vinegar
- 8 oz. dry white cooking wine
- 1 large can of tomatoes
- 2 to 3 bay leaves
- salt and pepper to taste
