- 4 cups good-quality chicken stock
- 2 Tbsp. cornstarch
- 1 tsp. ground ginger
- 1/4 tsp. garlic powder
- 2 large eggs
- 2 egg whites
- 1/2 tsp. sesame oil
- 3 green onions, sliced thin (about 1/4 cup sliced), plus extra for garnish
- 1/4 cup whole-kernel corn or creamed corn (optional)
- salt, to taste (I use about 1 tsp - I like my soup salty!)
- black pepper, to taste (I use about 1/4 tsp.)
Pumpkin and Butter Bean Soup

Pumpkin and Butter Bean Soup topped with diced fried bacon
- 1 tablespoon oil
- 1 1/2 medium onions, peeled and finely diced
- 3 medium cloves garlic, peeled and crushed
- 1 teaspoon ground cumin seeds
- 3/4 teaspoon curry powder
- 1/4 teaspoon salt, or to taste
- Pepper, to taste
- 750 ml 3 cups vegetable stock
- 750 g peeled, deseeded butternut pumpkin* cut into 2cm cubes
- 400g can butter beans, drained and rinsed (this should yield about 230g butter beans)
Creamy Pesto Chicken Soup

Heat olive oil in a dutch oven over medium-high heat
- 2 tbsp. olive oil
- 1/2 sweet onion, diced
- 1 lb. boneless, skinless chicken breasts, cut into bite-sized pieces
- a pinch of kosher salt
- 2 tbsp. flour
- 3 tbsp. pesto
- 2 cups chicken broth
- 1 cup. bite-sized pasta
- 14 oz. can quartered artichoke hearts, drained and roughly chopped
- 4-6 oz. baby spinach leaves
- 1 1/2 c. milk
- 1 up. shredded Italian blend cheese
Lovely Red Lentil Soup

- 2 tablespoons extra-virgin olive oil
- 1 sweet potato, peeled and diced
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1-inch piece fresh ginger root, peeled and minced
- 1 tablespoon curry powder
- 1 teaspoon cinnamon
- 1 teaspoon sea salt
- 1 cup dry red lentils
- 4 cups vegetable stock
- 2 tablespoons tomato paste
Bourbon Cranberry Sauce

Makes about 3 cups
- 1 pound (about 4 cups) cranberries
- 2 cups sugar
- 1/4 teaspoon ground cinnamon
- 1/2 tsp. orange zest
- 1/4 cup bourbon
Ground Beef and Sauerkraut Soup

In heavy frying pan, heat 1 tsp
- 1 lb. very lean ground beef (less than 10% fat)
- 2-3 tsp. olive oil (depends on your pan)
- 1 cup chopped onion (one large onion)
- 1 T minced garlic (or less if you're not that fond of garlic)
- 2 cups homemade chicken stock
- (or 1 14 oz. can chicken broth)
- 2 14 oz. cans beef broth
- 1 14 oz. can diced tomatoes with juice
- (I prefer Muir Glen Organic Fire Roasted Tomatoes)
- 1 14 oz. can sauerkraut with juice (or use bottled sauerkraut)
- 1 cup water (if needed)
- 1 T Splenda or brown sugar (use Splenda for South Beach Diet)
- 1 T Worcestershire sauce
- 3-4 dried bay leaves
- 3 T minced parsley or 1-2 T dried parsley
- 1 tsp. rubbed sage
- fresh ground black pepper to taste

- 2 tablespoons olive oil
- 2 cloves garlic, minced

- 1/2 cup heavy cream
- 4 ounces crumbled goat cheese
- 1/2 cup grated Parmesan, plus more for garnish
- 1 (12-ounce) jar roasted red peppers, drained and chopped
- Kosher salt and freshly ground black pepper, to taste

- 2 cups chopped red potatoes
- 2 cups frozen lima beans, thawed
- 2 cups frozen corn kernels, thawed
- 2 cups frozen sliced okra, thawed
- 1 onion chopped
- 2 lb. boneless beef roast, trimmed and cut into 4 inch cubes
- 2 lbs. pork shoulder, trimmed, and cut into 4 inch chunks
- 1 (28 oz.) can crushed tomatoes
- 1 (28 oz.) bottle barbecue sauce
- 2 cups beef broth
- 1 tbs. hot sauce, optional
