- Meat Sauce:
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 1 carrot, finely diced
- 4 cloves garlic cloves, minced
- 24 ounces (700 grams) ground beef mince
- 10 ounces (300 grams) ground pork mince, or beef
- 24 ounces (700 grams) pasta sauce
- 14 ounces (410 grams) crushed tomatoes
- 3 heaped tablespoons tomato paste, (I use garlic and herbs flavoured)
- 2 beef or vegetable bouillon cubes, crushed
- 1 teaspoon each dried oregano and basil
- 1/2 teaspoon sugar, (if desired)
- Salt and pepper, season to your tastes
- White Sauce (Béchamel):
- 4 tablespoons butter
- 4 tablespoons flour, all purpose or plain
- 4 cups milk, (I use low fat)
- 1 cup fresh shredded parmesan
- Lasagna:
- 13 ounces (375 grams) fresh lasagna sheets*
- 17 ounces (500 grams) fresh mozzarella cheese, shredded
- 2 tablespoons finely chopped fresh parsley

1. score bread diagonally, cutting into bread
- 1 loaf french bread
- 1/2 c butter, melted
- 1 T parsley
- 1 t poppy seeds

1. heat oil in heavy pot and add sausage, onion and garlic and saute till onion is brown, about 15 minutes
- 2 T olive oil
- 1/2 lb sausage (use low fat)
- 1 onion chopped
- 4 garlic cloves, chopped
- 2 cans of kidney beans-drained and rinsed
- 2 cups chicken broth (use low sodium)
- 1 t creole seasoning or 1/2 t cayenne pepper
- 1 cup uncooked rice (makes 3 cups cooked)
Creamy pesto shrimp alfredo

Heat butter in a large skillet over medium-high heat
- 2 tablespoons unsalted butter
- 1 pound (500 g) jumbo shrimp (or prawns), tails on or off
- 4-5 cloves garlic, minced
- 4 ounces (120g) grape tomatoes
- 1/2 cup basil pesto
- 1 cup half and half or heavy cream* SEE NOTES
- 1/2 cup fresh grated Parmesan cheese, divided
- Salt and pepper, to taste
- 1 tablespoon fresh parsley or basil, chopped
Black Bean and Roasted Tomato Soup

1. combine veggies and add garlic, oil and oregano
- 1 lb plum tomatoes halved lengthwise
- 1 onion halved and cut into wedges
- 1 carrot, peeled and quartered
- 3 garlic cloves chopped
- 1 T olive oil

- 2 cups vegetable broth
- 2 cans black beans rinsed and drained
- plain yogurt or sour cream

1. combine first three ingredients in ziplock bag and marinate in frig for an hour, turning occasionally

- 3 T fresh lemon juice
- 4 6 oz salmon filets
- 4 T brown sugar
- 6 t chili powder
- 4 t lemon rind
- 1/2 t cumin
- 1/2 t salt

- 2 teaspoons margarine
- 3/4 cup chopped onion
- 2 teaspoons all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 1/2 cups 1% low-fat milk
- 2 cups cooked long-grain rice
- 3/4 cup (3 ounces) crumbled feta cheese
- some goat cheese, if available
- 1 large egg, lightly beaten
- 2 large egg whites
- 1 (10-ounce) package frozen chopped spinach, thawed, drained, and squeezed dry
- 6 mushrooms, sliced
- Olive oil-flavored cooking spray
- 2 tablespoons grated Parmesan cheese

Preheat the oven to 300 degrees F
- 2 medium zucchini (about 3/4 pound)
- 2 tablespoons grated red onion
- 2 extra-large eggs, lightly beaten

Garlic mushroom chicken thighs

Pat chicken thighs dry with paper towel and trim off excess fat
- For The Chicken:
- 1 1/2 pounds (700g) boneless skinless chicken thighs (around 6-8 fillets)
- 1 teaspoon each onion powder and garlic powder
- 1/2 teaspoon each of dried thyme and rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon cracked black pepper
- 2 tablespoons olive oil
- For The Sauce:
- 1 tablespoon butter
- 8 ounces (250 g) sliced brown mushrooms
- 4 cloves garlic, minced (or 1 tablespoon minced garlic)
- 1 tablespoon fresh chopped parsley
- 1/2 - 1 teaspoon each of dried thyme and dried rosemary (adjust to your taste)
