Barbecue roasted Salmon

  • 1/4 cup pineapple juice
  • 3 T fresh lemon juice
  • 4 6 oz salmon filets
  • 4 T brown sugar
  • 6 t chili powder
  • 4 t lemon rind
  • 1/2 t cumin
  • 1/2 t salt
  • 1/2 t cinnamon


Servings 4


Step 1

1. combine first three ingredients in ziplock bag and marinate in frig for an hour, turning occasionally.

2. preheat oven to 400 degrees.

3. remove fish from bag and discard marinade. combine sugar and spices in bowl and rub over fish.

4. place in baking dish and back for at least 12 minutes or till done.
