- 3 cups red Burgundy wine
- 2 Tbsp. cognac
- 2 onions, sliced
- 2 carrots, sliced
- 1 sprig of parsley
- 1 bay leaf
- 1 clove garlic, peeled
- 10 black peppercorns
- 1 tsp. salt
- 2 lb. beef chuck, cut into 2-inch cubes
- 4 Tbsp. olive oil
- ~ Salt and pepper to taste
- 1/4 lb. slab bacon, cut into cubes
- 3 Tbsp. flour
- 1 cup beef broth
- 1 Tbsp. tomato paste
- 3 cloves garlic, crushed
- 1/4 cup (1/2 stick) butter
- 1 lb. mushrooms, sliced
- ~ Parsley, chopped, for garnish

- 2 can(s) (15 to 19 ounces each) black beans, rinsed and drained

- 1 onion , chopped
- 2 cloves garlic , minced
- 1 teaspoon poultry seasoning
- 1 cup celery , sliced
- 1 cup carrots
- 2 tablespoons flour
- 1 cup finely diced cabbage
- 8 cups chicken broth
- 2 cups cooked chicken
- 1/2 large red pepper , diced
- 1/2 cup wild rice
- 1 1 ⁄2 cups mushrooms
- salt and pepper to taste

Preheat oven to 200°C | 400°F
- FOR THE CHICKEN:
- 6 chicken thighs (skin on or off, bone in or out)*
- 2-3 teaspoons garlic powder
- Salt and pepper
- FOR THE SAUCE:
- 1 tablespoon minced garlic
- 400 g (14 oz) cups sliced mushrooms (1½ cups)
- 1 teaspoons dried basil
- 1 teaspoons dried oregano
- 2 teaspoons fresh chopped parsley
- 1½ cups evaporated milk*** (half and half or cream if using: see notes)
- 1 teaspoon chicken bullion powder (or stock powder)

- mornay sauce:
- 1 box lasagna
- 3 pkg frozen spinach- thawed and drained
- 1 lb ricotta cheese
- 1 cup parm cheese
- 1/2 lb butter melted
- salt, pepper, nutmeg
- 2 jars maranara
- 3 T butter
- 2 T flour
- 1 c warm milk
- 1 c light cream
- 1 egg yolk
- 1/2 c swiss cheese shredded

1. melt 4 T butter in saucepan and add flour and stir till blended

- 2 cups chicken stock
- 2 1/2 cups evaporated and regular milk (total)
- 1/4 cup chopped onion

Preheat the oven to grill/broil settings on medium - high heat
- Dressing:
- 1/4 cup cubed ciabatta or sourdough (or store bought croutons)
- 1 pound | 500 g large raw shrimp (prawns), peeled and deveined, tails intact
- Juice of 1/2 a large lemon
- 1 tablespoon minced garlic
- Pinch of salt
- Cracked pepper, to taste
- 1/4 cup non fat diced bacon
- 1 egg, soft boiled (or poached)
- 4 cups Romaine (Cos) lettuce, leaves washed and dried
- 1/2 an avocado, sliced
- 1/4 cup shaved parmesan cheese

- 1 tablespoon whole egg mayo (reduced fat)

- 1 garlic clove, crushed (or 1 teaspoons minced garlic)

- 2 lbs. of ground beef
- 1 onion, chopped
- 3 carrots, chopped
- 4 stalks of celery, chopped
- 2 (28 ounce) cans diced tomato’s, undrained
- 1 (16 ounce) can red kidney beans, drained and rinsed
- 1 (16 ounce) can white kidney beans, drained and rinsed
- 3 (10 ounce) cans of beef stock
- 3 tsp. oregano
- 2 tsp. pepper
- 5 tsp. parsley
- 1 tsp. tabasco sauce (optional)
