- 1/2 avocado

Becky's Amazing Taco Dip

A chilled, spicy taco dip to share with friends
- Spicy Mayo:
- ~ 1 can Refried Beans
- ~ 1 pound of Lean Ground Beef
- ~ Shredded lettuce
- ~ Shredded cheese, Mexican style and/or hot pepper, or?
- ~ Black olives
- ~ Chopped green onions (optional)
- ~ 2 cups of Mayo
- ~ 1 cup of salsa
- ~ 2-4 tbsp of hot sauce
- ~ Chipotle seasoning, like Mrs. Dash's Southwest Chipotle
- Gluten Free Taco Seasoning
- ~ 2 tsp garlic powder
- ~ 1/2 tbsp salt
- ~ 1 tbsp chili powder
- ~ 1.5 tsp dried crushed red pepper
- ~ 1.5 tsp ground cumin
- ~ 1 tsp dried oregano
- ~1.5 tsp corn starch or potato starch
- ~ 1 tsp sugar, optional
- ~ 2 tbsp onion powder, or add chopped green onions to ground beef (in all reality I forgot to add sugar and any onions & it was still awesome)
Lemon Thyme Basil Chicken

This marinated chicken recipe is light and refreshing, delicious, and easy to make
- Marinade
- 3-4 Chicken breasts
- 1 small handful of lemon thyme, chopped
- 1 small handful of basil, chopped
- 1 tsp of your favorite lemon pepper seasoning
- 4 tbsp olive oil
- juice from 1/2 lemon
- 2 fresh garlic cloves, or 1/2 tsp garlic powder (check your lemon pepper seasoning to make sure there isn't already garlic in it)
- Other
- Mushrooms
- Your favorite veggies or salad to pair with it
Creme de Menthe Bars

This is my mother's most delectable recipe
- 1.25 cups butter or margarine divided into 1/2 cup, 1/2 cup and 1/4 cup
- 1/2 cup unsweetened cocoa powder
- 3.5 cups sifted powdered sugar divided into 1/2 cup, 3 cups
- 1 egg, beaten
- 1 tsp vanilla extract
- 2 cups graham cracker crumbs (try Kinnickinnick for gluten free)
- 1.5 cups semi sweet chocolate pieces
- 1/3 cup green creme de menthe liqueur
Sweet Potato Apple Cookie Muffins

Sometimes beautiful things happen
- ~ 2 cups of all purpose gluten free flour – make sure that about 1/3 – 1/2 of this flour is almond meal flour. It is very fluffy and moist flour.
- ~ 1 teaspoon of xanthan gum
- ~ 1 tablespoon of baking powder
- ~ 1/2 teaspoon of salt
- ~ 2 tablespoons of sugar or 2 tablespoons of brown sugar and 1 of white
- ~ 5 tablespoons of cold unsalted butter, diced
- ~ 1/2 - 1 cup of milk (you likely won't need this much)
- ~ 1 cup sweet potato puree
- ~ 1 apple diced
Marinated Kale Salad

- 5-6 cups kale, washed and cut with kitchen scissors into thin strips.
- 1/2 cup dried unsweetened cranberries.
- 1/2 cup pine nuts.
- 1/2 cup diced red onions.
- 1/2 cup cherry red tomatoes
- 1/3 cup feta cheese.
- juice of one lemon
- 2 fresh diced garlic cloves
- 1/4 cup olive oil
- 1/2 cup balsamic vinegar
- 1/2 teaspoon sea salt
- 1/2 teaspoon black pepper
Grilled Flank Steak w/ Spicy Vegetables

- 1/2 tsp cinnamon
- 1 tsp ground cumin
- 1 tsp salt
- 1/4 tsp cayenne pepper

Quiche Muffins

- 1 Can Chickpeas
- Large Handful of Spinach
- 1-1.5 Cups of Green Beans
- 1/4 Cup Chopped Green Onion
- 8 Large Eggs
- Parmesan Cheese or any other kind
- 1/2 Cup of Fine Bread Crumbs (gluten free if you can find em!)
- 1 Cup of Milk
- Basil
- Black Pepper
- Garlic Powder
- Salt
- Muffin tin

Chocolate Cake with Peanut Butter Glaze

A chocolate cake & frosting recipe compiled from a couple different sites
- cake-dry:
- 1/2 cup light spelt flour (I will sub oat, rice or almond flour to makes this gluten free)
- 1/2 cup whole spelt flour
- 1/3 cup cocoa powder
- pinch of cinnamon
- 1 tsp instant espresso powder or finely ground coffee
- 3/4 tsp baking soda
- 1/2 tsp baking powder
- pinch of salt
- cake-wet:
- 1/4 cup muscovado sugar (or dark brown sugar)
- 1/2 cup cane sugar
- 1 cup cultured milk of some kind (kefir, buttermilk, cultured coconut etc or the aforementioned lemon juice curdling method)
- 1/3 cup melted coconut oil
- 1.5 tsp vanilla extract
- peanut butter glaze:
- 1/4 cup peanut butter
- 1 cup powdered sugar
- 2 tsp maple syrup
- a splash of vanilla extract
- 3 tbsp milk of your choice

- 1 bag of spinach
- 1/4-1/2 cup of olive oil
- 1/2 cup of water
- 1 tsp of sea salt
- 1 tsp of baking powder
- 1 clove garlic
- 1/2 tsp pepper
- 1 tsp basil
- 1 cup of flour, approx.- I used oat flour, almond meal and hazelnut meal
- 1/4 cup of cheese- I used mozzarella. Parmesan, gouda, dubliner, cheddar would all work.
