Tee Pon Pork

Aromatic and exotic. Serve with coconut rice
- 1 tbsp canola oil
- 3.5 lbs boneless pork shoulder
- 1/2 cup low sodium soy sauce (gf tamari or coconut aminos)
- 1/2 cup Shaoxing wine or dry sherry
- 1/3 cup packed brown sugar
- 2 tbsp julienne cut peeled fresh ginger
- 2 cinnamon sticks (3 inches)
- 1 star anise or 1/2 tsp anise seeds
- 8 teaspoons chopped fresh cilantro
Moroccan Inspired Kale and Quinoa Salad

This ultra-flavorful salad will knock your socks off
- 2 Chicken breasts
- 1 bunch of red kale (or your favorite kind)
- 1/2 cup quinoa - soaked for at least 1 hour
- 2 medium golden beets
- 1 head of cauliflower
- 1/2-1 leek, green tops removed
- 1 can white beans/chickpeas/cannellini
- 1/2 cup raisins
- 1/4 cup sliced almonds
- zest of 1/2 orange
- 1/4 to 1/2 cup black olives
- Harissa infused olive oil (available at www.islandoliveoil.com/collections/olive-oils, or you can try infusing your own. it adds another layer of spice to the vegetables and chicken)
- salt
- pepper
- cumin
- ras al hanout (recipe below) (this is great to have on hand. amazing on chicken, eggs, fish, meatballs, veggies, etc)
- 1-2 tbs mint
- 1-2 tbs chives
- 2 cloves garlic
- juice of 1/2-1 lemon or lime
Spinach and Arugula Salad

- 1 cup of spinach
- 1 cup of arugula
- 1/2 avocado sliced
- 1/4 cup of frozen blueberries
- 1 or 2 tbsp of sunflower seeds

Squash Risotto

- 1 beef tenderloin roast (short loin) 3.5-4 lbs
- 5-6 tbsp unsalted butter, melted
- 1 tsp finely chopped fresh thyme
- 1 tsp finely chopped fresh sage
- salt & pepper

- 2 lb fresh white button mushrooms, brushed clean and thinly sliced

- Marinade:
- ~ Juice from 2 lemons
- ~ 1-1.5 cup of olive oil

The Best Gluten Free/Dairy Free Banana Bread

This banana bread is easy to make, soft, moist, banana-y, holds together, and relatively healthy for you
- 3 medium-large very ripe bananas
- 6 large eggs, or 5 x-large eggs and 1 x-large egg white
- 1/2 cup honey or pure maple syrup (the better the quality, the healthier this will be)
- 1 cup unsweetened almond or coconut milk, or 1 cup milk of your choice
- 1/3 cup melted coconut oil
- 2 cups gluten free flour, plus maybe a little extra. I prefer to grind my own oats and buckwheat, and do about 1.5 cups oats/buckwheat and 1/2 cup almond meal
- 1 tbsp baking powder
- 1/2 tsp of psyllium husk flakes (can be found at most Whole Foods or similar)
- pinch of sea salt
- 1/2 tsp cinnamon
- 1/8-1/4 tsp of nutmeg, cloves and ginger
