Kahuki's Colada Smoothie

A Tone It Up recipe for a delicious protein smoothie
- 1 cup of fresh pineapple cut into cubes
- 1/2 cup of Coconut Almond Milk
- 1/2 cup of fresh pineapple juice
- 1/4 cup unsweetened coconut flakes
- 1/2 cup of ice cubes
- 1 serving Perfect Fit Protein or other brown rice protein.
Spicy Bison Chili

This is a super spicy chili made with ground bison
- 1 lb ground bison
- 15 oz can butter beans
- 15 oz can kidney beans
- 1 small can of chipotles in adobo
- 1 red bell pepper
- 1 Poblano pepper
- 1 Onion
- 1 small can of tomato paste
- 1 or 2 tsp Cayenne powder
- 1 or 2 tsp of chipotle powder
- 1 or 2 tbsp brown sugar
- 2 tsp of oregano
- 4 cloves of garlic crushed
- 1 tsp salt
- 1 tsp cinnamon
- Black pepper to taste
- 1 bottle of beer, any preferred medium or dark beer
- 5 boiled tomatoes minus skin
- Beef stock
- Cilantro
- Sour cream - optional
- Cheese of choice - a cheddar or Mexican mix perhaps?
- Tortilla chips - optional
Bricked Chicken

This whole chicken dish is so intriguing (a brick is involved!?), can't wait to give it a try
- 1 whole chicken
- marinade of choice. Recommend 1/2 cup olive oil, 1/2 cup lemon juice, crushed garlic, fresh oregano, salt and pepper.

Salmon Burgers w/ Lime Mayonnaise

This recipe comes from my grandma, who also supplied the Salmon Chowder recipe
- Burgers
- 1 lb salmon filet, skinned and cut into 1 inch chunks
- 3/4 cup panko bread crumbs (or bread crumbs of choice, gluten free if necessary)
- 2 green onions, thinly sliced
- 2 tbsp snipped fresh cilantro or parsley
- 2 tsp grated fresh ginger
- 1-2 cloves of garlic, minced
- 2 eggs, lightly beaten
- 2 tbsp reduced sodium soy sauce (gluten free if necessary)
- 1 tbsp lemon juice
- 2 tbsp oil - coconut or olive or grapeseed
- Lime Mayonnaise
- 1/4 cup mayo of your choice
- 2 tbsp minced red onion
- 2 tsp lime juice, freshly squeezed
Quick Jambalaya

Here's a simple recipe for jambalaya, suggested by my cousin, Rachel
- 1 tbsp olive oil
- 1/2 lb hot Italian sausage links, sliced and quartered
- 1 onion, chopped
- 1 14oz can diced tomatoes, undrained
- 1 14oz can/box reduced sodium chicken broth
- 1 green pepper chopped
- 1/2 cup of your preferred barbecue sauce
- 1 lb frozen cooked shrimp, thawed (this is optional, sub chicken if you do not like shrimp)
- 2 cups instant white rice, uncooked
Berry & Banana Salad

Another one from the Finnish grandma
- 1/2 lb strawberries de-stemmed and thinly sliced
- 1/2 lb blueberries
- 2 bananas, thinly sliced
- 3/4 cup powdered sugar (use more or less depending on your taste. honey would sub well)
- juice of 1 orange
- juice of 1/2 lemon
Gluten Free Granola

This nut free, gluten free, dairy free, fiber full, protein packed granola is AMAZING
- ~ 1.25 cup oats
- ~ 1/2 cup dried blueberries
- ~ 1-2 tbsp chia seeds
- ~ 2 spoonfuls of psyllium husk flakes
- ~ 1/2 cup chopped dates
- ~ 1/4 cup dry quinoa
- ~ 1.5-2.5 tbsp oil - coconut, walnut, olive, other?
- ~ 1.5-2.5 tbsp maple syrup
- cinnamon, nutmeg, ginger, salt to taste
Gluten Free Blueberry Pancakes

Just some yummy gluten free blueberry pancakes you must make ASAP
- ~ 1 cup of tapioca flour
- ~ 1 cup of almond meal flour
- ~ 1 cup of buckwheat flour
- ~ 1/2 cup sugar
- ~ 1-2 tsp of baking soda
- ~ 1-2 tsp of vanilla
- ~ 2 eggs
- ~ 1/2-1 tbsp of cinnamon
- ~ milk - dairy, almond, soy
- ~ blueberries
Grandma's Finnish Salmon Chowder

Straight from my grandma who visited Finland several years ago with my grandpa- "We were served this soup in Finlan...
- ~ 1 Tbsp butter
- ~ 3 cups chopped onions
- ~ 1/2 tsp celery salt
- ~ 1/4 cup your choice GF flour
- ~ 8 oz clam juice
- ~ 4 cups cubed, peeled baking potatoes
- ~ 1.5 cups thinly sliced carrots
- ~ 3.5 cups 1% milk (use whole milk, cream, or mixture of milks/cream for thicker soup)
- ~ 10 oz roasted salmon
- ~ 2 Tbsp chopped fresh dill
- ~ 1/4. tsp Worcestershire sauce (look for GF kind)
Cocoa Bomb Chili

A hearty, warming chili perfect for all seasons
- 2 lb ground beef (or beef chunks, turkey)
- 1 medium sweet potato
- 2 bell peppers, can also use hot peppers, your choice
- 1 14.5 oz can of fire roasted tomatoes
- 2 small cans of green chilies
- 1 medium onion of choice
- broth or water, about 2-3 cups
- 1 can of black beans (optional)
- Spices
- 1 tbsp chili powder (if spicy, use less)
- 1 tbsp cocoa powder
- 1 tbsp paprika (smoked or sweet)
- 1/2 tbsp cumin
- 1/2 tbsp garlic or 2 garlic cloves
- 1/2 - 1 tsp cayenne (depending on your peppers and your chili powder)
- Salt and pepper to taste
- Cheese of choice to top, we love adding goat cheese
- Optional - tortilla chips for crunch, scallions
